One-Dish Rockfish

Meh. It's okay. The amount of onion was way too much and overpowered the flavor of the fish. I used 1/3 of a small onion and it seemed to taste much better.

Slow Cooker Spicy Chicken

Very quick and simple recipe. Fork shred and served in tortilla with sour cream, guacamole, and/or shredded cheddar cheese. Or drain the liquid well and use as the ingredient in a tamale bake recipe or any other recipe that calls for shredded chicken with a mexican-style bent. Also good in macaroni and cheese along with fresh diced jalapeno.

Pork Chops for the Slow Cooker

Followed the recipe exactly as written. 6 hours was WAY too long. The meat was dried out and bland. The flavor never penetrated the meat, and the "sauce" separated. Most of the flavor was on the bottom of the crock pot and the top was an oily/greasy mess from the fat rendered from the chops. The only redeeming quality was the aroma and flavor on the bottom layer of chops in the crock pot. They were almost edible. We won't be repeating this recipe.

Roast Chicken with Rosemary

I didn't have an onion, so I used a Fuji Apple instead. The result was delicious. A lot more liquid was created than I'd expected, though. It made more like boiled chicken in that sense.

Baked Oatmeal Squares

The result was tasty. But the ingredients didn't hold together properly in the pan, and the result was a very dry, crumbly mess. Admittedly I was trying a double batch because all I had was a 4.5 qt pan, but there's no reason doubling the proportions wouldn't work with this recipe. I'll try it again, but with more liquid next time. The good news is, the dry crumbly mix tasted great when it was 3 days old and had milk poured over it. :)
