Almond Maple Granola

Delicious! I used my own variation of ingredients but the wet ingredients here made for a really nice consistency. I think baking granola so long compromises the texture so I only leave it in the oven for less than an hour.

Quinoa and Black Bean Chili

Really excellent! Some things we added/substituted according to what we had on hand: hominy instead of regular corn, green beans instead of zucchini, plus italian sausage. The chipotles made for a fantastic, full flavor!!!

Ratatouille Pasta

This is a great alternative to traditional ratatouille, which requires baking. Now that it's summer, zucchini and eggplant are in season but it's too hot for the oven! We added sweet peppers and spinach. Also mixed in ricotta instead of mozzarella and didn't broil it, which made for a creamy texture.

My Own Famous Stuffed Grape Leaves

I've been meaning to try to make dolma for years but I guess it was kind of intimidating! Turns out it's pretty simple - just time-consuming. I couldn't get my hands on fresh mint so I took a different route with garlic, cumin and allspice. These little guys are addictive and fun to show off!

Baked Macaroni and Cheese with Tomato

You really can add just about any vegetable to this recipe and our choice is broccoli. Don't even need to precook it because the baking leaves it plenty soft. Added garlic powder and basil and I downed the butter and didn't miss it.

This recipe is easy but not quite the MOIST burek I love so much! I think moisture is also the key to working with phyllo dough so here are a few ideas. 1) Don't drain the beef too much - or at all! The grease helps to make the dough sheets pliable. 2) When you are not using the dough sheets cover them directly with a damp kitchen rag so they don't crack when you roll them up. 3) If the dough still isn't moist enough to work with you'll have to keep lathering on the butter as you roll it. Also I threw an egg in the beef mixture, which seemed to help. A little more grease may not make it healthier but it definitely makes it more delicious and more authentic!

Sauteed Apples

Whenever we need something to spice up our breakfast - could be waffles pancakes toast whatever - I throw some apples on and it's instantly gourmet. You can't go wrong with this one.

Moroccan Tagine

New favorite! We like to use Italian sausage instead of chicken and adapt the ingredients to whatever we have in the fridge. We went to Morocco recently and loved the food so we add a few extra spices to make it just as flavorful. Makes one fantastic leftover. Serve over couscous rice or nothing at all.

Stuffed Endive

Solid idea. My husband throw random ingredients at me to see how I handle them and this week it was a baby endive. Made a pretty lunch! We adjusted the egg salad recipe to taste.

Chocolate Muffins

I downed the baking soda to 1 tsp and used hot cocoa drink mix because I was out of cocoa and so I upped the chocolate (dark chocolate chunks) to 1 cup. Oh yeh we are making these again. Definitely moist!
