Nick's Favorite Cherry Pecan Bread

*EDIT* Also was going to add some coconut, but forgot. Very good bread. I added some lemon zest, didn't have buttermilk, so I soured milk using juice from 1/2 a lemon and letting it set for 10 mins. Also didn't use bread pan, instead used mini pans, some that are teddy bears and others that are mini bundt pans. Made 7 mini breads, that I will add to my gift baskets for Christmas. Very good bread, moist and tastey! Recipe is a keeper, everyone loves it.

Peanut Butter Dreams

Yummmmm! Pretty much sums it up! These are absolutly fabulous! They taste just like Reese's Peanut Butter Cups with an added light crunch! I can't wait to give them to everyone. I'm putting them in my Christmas Goody Bags! My family loves them. I had to put them in their packaging so they would stay out of them. This recipe yielded about 70 balls for me.

Chocolate Truffles

These are wonderful! The only thing I will do next time is, 1) line a sheet pan with wax paper or foil so getting the batter out will be easier, and 2) will use a mellon baller to make the balls. I made the mistake of leaving the mixture in the sauce pain to set for 3 hours then had a heck of a time getting it out with a spoon and then as I rolled the balls, I had a lot of melted chocolate on my hands. Other than the lack of handling ease, these are wonderful. I rolled some of mine in powdered sugar, some in chopped pecans and some in unsweetened cocoa. I'm making these again tomorrow and this time I will try them rolled in coconut too. Some didn't care for the unsweetened cocoa, so I won't do that one again. This recipe was very easy to make otherwise and tastes great! Everyone loved them.

Microwave Oven Peanut Brittle

This is just wonderful brittle! Came out great! I made 2 batches to give in my goodie baskets this year, hubby says "make more"! Everyone loved it. Thank you for sharing this fabulous recipe. So easy to make and comes out perfect every time!

Gumdrop Candy

I never use a recipe without first reading reviews, but this one I used before reading. They sound great, but like the other cooks, they didn't set right. I followed recipe to the "T" and I got a wet, mess. I cut them in the pan and took out a few, even if they were rolled in sugar, they would have been a sticky mess. Plus, using the size pain indicated, they were only, maybe an 1/8th inch thick. And I did come back to a full boil in between each addition and then boiled for a minute after each addition. I'm sorry, this just didn't work for me. Perhaps using light corn syrup instead of apple sauce and bringing to a hard ball stage 250-265 degrees might develope something that would work better?

Vegetable Beef Soup

Wonderful recipe. Thank you for posting this. This is really a delicious soup recipe. I had never made beef veggie soup before. This will definately be one I make frequently in the fall and winter and I know for sure I will make it anytime I crave soup. Very easy, usually have all of the ingredients in your pantry. One thing I was out of is tomatoe sauce, so I used a bit of tomatoe vegetable juice. It was very good! I also added some okra and a can of corn.

Never Fail Biscuits

I don't know what happened to my biscuits, but they didn't rise and they were in great need of salt and flavor. The texture was great and they tasted good except for not enough salt, so we ate them anyway, but they were the same size as the raw dough. Wish you could tell me what went wrong?

Buckeye Balls I

These were delicious, but very hard to work with. Even freezing the peanut butter mixture, it would melt in your hands in no time. So, I spread some of the chocolate mixture in a 9x9 casserole dish, froze it, then spread the peanut butter mixture and then topped it with the remaining chocolate mixture. Refrigerated for a couple of hours then cut into bite size pieces. Also stored them in the fridge! This worked well and was very good. Thank you for sharing!

Very good recipe. I did change a couple of things. I omitted the water chestnuts and added some honey, about 3 tbls to the cream cheese mixture. They are delicious with the honey in them. Thank you for sharing!
