Vegetable Calzones

So, I just went out and purchased ingredients. Try to find a 'four cheese' pasta sauce... oh yeah, the only one in a hundred SKUs is Classico. It is nearly impossible to find. It's not an alfredo sauce to at least get you looking in the right 50' of shelf space. Overall, it got a B from the family which includes 2 six year olds, 9, and 11 year olds. Ehhh, I could do without. By the way, it burned the bejeebers out of my mouth even after waiting 5 minutes... give it at least 15 to be safe with kids. Thanks, Ian

Grilled Lemon Yogurt Chicken

Cooked exactly as recipe stated except I used boneless chicken thighs. They cooked quickly and evenly. Even my kids who will not eat anything with sauce or spice loved it. They were skeptical, but when they finally tried it, they couldn't get enough of it. Dipping sauce didn't necessarily add much for me. I've never made harissa before, so it was a good learning experience.

Tofu Vegetable Pot Pie

I made this last night using canned vegetables along with 2X spices of various sorts to jazz it up. I love the creative use of tofu in this. The family loved it except for my tofu haters... but that is no reflection on the great recipe. My one issue is that when I was done, the potato was still on the table... the recipe does not say when to add it, so I didn't even notice the issue until after I sealed up the pie. I'd put it in with the onion to give it time to soften up.

Mint Pesto Pasta

I didn't get it right. The color was unappealing, so I added tomato paste. The flavor was bland as people suggested so I just added stuff around the pantry with some success. What worked best was reserving a few tablespoons and adding red wine vinegar to make a nice low calorie salad dressing.
