Marshmallow Fondant

4 Tbsp water seems to be too much, ~1.5-2 Tbsp water + 1 tsp vanilla-which should be clear, by the way, if you don't want light creamy-golden-brown fondant-works better, as after making several batches I can declare that 4 Tbsp water requires > 2 lbs sugar. Also recommend sifting sugar prior to mixing. Once you get the ratios right this is a good recipe, just wish I hadn't had to spend so much time experimenting/adjusting liquid volumes and running out of sugar.
