Mini Meatloaves

This was a great recipe, gobbled up by everyone, even the picky toddler. The only very slight change I made was to use old-fashioned oats, as I didn't have any quick-cooking oats. I also doubled the recipe and froze a pan for later. I'll be interested to see how they taste out of the freezer.

Fluffy Pancakes

This is a great recipe! I recently had to go dairy-free and this recipe can be modified into a dairy-free version very easily. I substitute almond milk and coconut oil for the butter and it comes out great every time.

Easy Slow Cooker Meatballs

I really love the ease of this recipe. It's very adaptable. I've used ground turkey, ground venison, and different variations on tomato sauces and diced tomatoes. It always turns out good!

Bermuda Spinach Salad

Chocolate Texas Sheet Cake

This recipe is awesome! I am a pretty good cook, but not a great baker when it comes to cakes. I usually stick to box mixes so I can have a nice, moist cake. I just ate the last piece two days after I made it, and it is still delicious and moist. I did sub in the one cup of coffee for the water like another reviewer recommended, and I used light sour cream, as it was all I had on hand. Absolutely fantastic! Thanks for this great recipe!

Pumpkin-Carrot Rice

I thought this was an interesting and tasty variation on brown rice. We prefer to eat brown rice for health reasons, but I don't really care for it, so I'm always looking for ways to jazz it up. We had this rice with pork chops and will definitely be making it again.

YUM! I loved this easy and cheap recipe! I didn't have ham, so I subbed in 1 c. leftover cooked pork chops. I love that it's low in calories, as well. Will definitely make again!

Asparagus Parmesan

Fabulous! We made this with pork chops and mashed sweet potatoes, but the asparagus ended up being the centerpiece. Like other reviewers, I nixed the butter and just used olive oil. I wasn't sure about the amount of asparagus...if the recipe contributor meant 1 lb. before or after trimming, so I used 1 lb. after trimming.

Southern Living Magazine's Chicken-Fried Steak

This is the BEST chicken fried steak recipe! I was going through my recipe box and couldn't believe that I forgot to review it, since we've been eating it regularly for about three years. I've had so many people ask me for this recipe. Putting the ready ones in the oven is a really good idea, since it crisps them up a little bit more, keeps them hot, and drains off some of the excess grease. I've noticed they are a bit soggy if I skip this step.

Double Tomato Bruschetta

We had this for a light dinner, alongside a tossed salad. I liked this, but felt like it was missing something. I did use about half the cheese that it called for and added a little bit of parmesan to the mozzerella. I felt like it needed a lot more basil, and I like the idea of brushing the bread with olive oil first. We love garlic, so I might also double the amount. I only used four tomatoes which was plenty, and I wasn't able to find sun dried tomatoes in oil, so I used dried ones. I do think we'll keep this recipe, but I will definitely be tweaking it. I could barely taste the cheese, so I think I might omit it. No need to add calories if you can't taste it anyway!

Chinese Chicken Fried Rice II

Awesome recipe! Great way to use up leftover chicken and rice. I used leftover brown rice, and a stir-fry sauce that I had on hand. I thought the amount of pepper was perfect. This will be a staple around our house!

Pot Stickers Traditional

I had a really hard time making these as actual potstickers. I didn't have the proper pan for it, and they just didn't turn out great. I took all the filling, cooked it up, and we served it over rice. That was actually really tasty! We eat it all the time, and call it potsticker hash :) I usually use a full lb. of ground pork.
