Chicken Milano

After all the rave reviews, I was disappointed. I tried using fat free half and half, since another reviewer said they substituted half and half for the cream. Since it was fat free it curdled. The sauce was thin- not at all like I expected. There are some recipes where you can substitute fat free products but this is not one of them. I used the tomatoes in olive oil and I think it was too oily.

White Bean Chicken Breast Chili

Extremely Spicy- too overwhelming with the different chili powders. I only used one TEASPOON of the ancho chile powder, not one tablespoon as the recipe calls for. I am glad I listened to my common sense. I usually like spicy food, but wish I had reduced the peppers even more. If you want to try this recipe start with 1/4 the amount of ground peppers it calls for, and then add more if you like. I wonder if all the rave reviews came from people who do not have these particular spices in their cabinet, so they substituted a milder chili powder.

Easy Raspberry Chicken with Coconut Rice

This was delicious. I read some of the negative comments, but tried it anyway. My tips are to shake the can of coconut milk very well before opening it to avoid the need for stirring much before cooking. USE BASMATI RICE!Do not stir while cooking. I used only 1 tsp of jarred fresh ginger but will use more next time. All you need is a little salt at the table and the rice is great- creamy and delicious. The chicken was perfect- just be sure to let the vinegar reduce- you do not have to stand by the pan breathing the fumes:) It only takes a few minutes to reduce.
