Grandmother's Buttermilk Cornbread

Meatloaf Cordon Bleu

This is a great idea! One suggestion - I gave up using dried bread crumbs for meatloaf a long time ago. I use plain deli white bread soaked in milk. Super moist and delicious with meatloaf. simply cut the bread in 1-2" cubes, place in a 9x13, and soak with whole milk. After about 10 minutes, using your hands pick up the bread and squeeze the excess milk off and place the bread on a cuting board. Chop and add to the meat mixture with 2 eggs.

Chili con Carne II

I have used the Boilermaker Tailgate chili recipe from Allrecipes for several years, and its amazing. Over time I have adjusted that recipe to my taste. I thought I would try this one and it didn't disappoint. Great recipe! Since I had them on hand, I used dried California Chili pods. I just roasted them with a tablespoon of oil and threw them in my food processor then to the crockpot with the other ingredients. Omitted the fresh chili pepper in lieu of the dried pods. Added a cup of pilsner, an extra onion, and an extra pound of ground beef but outside of that stuck to the original recipe. Darn good chili. Now whether its better than the Boilermaker Tailgate chili recipe, I will leave that up to individual opinions. Both are awesome.

Good New Orleans Creole Gumbo

I know little about Creole cooking and this is the real deal. I had to add a teaspoon of cayenne simply to add a bit more heat and I used 1 cup of bacon drippings vice 3/4 cup. I doubled the garlic as well.

Kerr Lake Catfish Stew

This recipe is excellent as-is. I made a double batch as the recipe stated it was for 4 servings, but that is the only thing wrong with it. As written, this recipe will feed 12.. easily. I made cornbread to go with it. My family gobbled it up.

Very nice. I took the advice to add zuchinni and beef broth and omitted the boullion cubes. I make my own salsa which is on the hot side of the spice scale, so I didn't need any cayenne. The only thing I added that wasn't mentioned was ground cumin. I can't imagine a Mexican soup without it.

Tortilla Soup II

Awesome! I am a big cilantro fan, so I doubled the amout, and I doubled the lime. Too save time I used 3 cans Tyson's (12.5 oz) breast meat. Huge hit! It fit the weather for the day.. mid 30's

Best Guacamole

This guac is really easy, but I don't see the need for olive oil. I a,m sure there are other reviews that state this, but you need other key ingredients to amke good guac. I appreciate this recipe in that it started me on my search for a good recipe. I took this recipe and omitted the oil and lemon juice, added 2 seeded and chopped jalepenos, one small deseeded and diced tomato, 2 tbs lime juice, and 1/2 teaspoon cumin. You have to refridgerate for at least an hour. I liked the result. Thx for a good base recipe

Boilermaker Tailgate Chili

Great Chili! I will probably use this recipe when I enter a chili cook off later this fall. My folks thought it was a bit spicy, but that is expected with them. The wife likes to put sour cream in it when served. I only added one ingredient not mentioned in the recipe, which was 2-3 tablespoons of dark brown sugar. Only because I really like the contradicting sweet/spicy flavors.

Avocado, Tomato and Mango Salsa

First off, this tastes amazing. I tried it as soon as I had finished preparing it at room temp and thought it was great then, but then I tried it this morning, and WOW, what a great combination af tastes! It really tantalizes your taste buds. Having said that, I rated it a 4, because of the inaccuracy of the prep time. I guess if you some really fancy food processor that will not make mush out of the ingredients, then maybe 15 minutes is realistic. I spent 45 minutes preparing the tomatoes (I remove the pulp), avacado, and mango. I chopped them by hand. With the onion, garlic, jalepeno (after removing the seeds), and fresh coriander, I made quick work of it with my pampered chef chopper. This is definately a keeper. I will entertain with this all year round!

Kaese Spaetzle

As an American living in Stuttgart, I can say that this recipe is authentic. I loved it! I did something just a little different because I like mine with bacon, which omits the requirement for butter. Fried .5 pound of bacon, reataining the grease in the large skillet. Sauteed a small chopped white onion in the grease, then added the spatzle/emmentaler and crumbled bacon. Yum!

Catfish Tuscany

I am a big catfish fan, actually most all fish. This hit the spot this evening. I noticed I had some frozen fillets in the freezer and had all the other ingredients. About 25 minutes later, I was enjoying my supper. I didn't alter the recipe, which is my tendancy on the second and third tries. As-is, this is a winner. I wil try it with mahi-mahi or grouper next.
