Cheesy Beef 'n' Rice

Reviewed: Jun. 14, 2012
Great as is, would be even better with a bit more kick. Next time will add some cajun seasoning to the meat while cooking. I think that's all it needs. I made with brown rice. After adding the 3 cups of water to the rice & garlic, I let simmer/slow boil for 25 minutes, then added the rest of the ingredients per the recipe, but added 1 more cup of water. Followed recipe after that. Turned out great!

I halved the sugar in the second half of the recipe and also the water. I thought it was great and will make this again and again.

Exquisite Pizza Sauce

Reviewed: Apr. 30, 2011
I like my sauce a little sweet, so I made exactly like the recipe and it turned out fantastic. I made eight 8" pizzas and had plenty of sauce. Have made twice sofar and will continue to make this recipe.

Vegetable Beef Soup I

Reviewed: Oct. 9, 2006
This is an easy recipe that tastes awesome and even pleases my husband who dislikes most vegetables. I usually add extra seasonings and sometimes I add extra meat. I can heartily recommend this recipe. I have made it multiple times and each time it turns out great.

Peanut Butter Balls II

Reviewed: Sep. 26, 2008
Almost perfect! These are close to my mom's, who makes them without a recipe. I used a bag and a half of chocolate chips to dip them and cooled them in the freezer to make them slightly firm so dipping was much easier. I added paraffin wax to the chocolate, but didn't add enough because they were still sticky to the touch. That's the only flaw with this recipe. The chocolate needs wax to set it. (Paraffin is not generally edible, but my family has been making candy with it for years.) I might try the Dolci Frutta chocolate dip next time for a good coating without the wax and a lighter chocolate flavor.

Turkey Squash Casserole

Reviewed: Jul. 8, 2008
A wonderful use for the yellow squash I've been harvesting! A great recipe is one that I don't have to change a lot and this is one of those. I did use 3 cups of squash instead of 2. Next time, I think I'll cut back on the butter and not use the oil to cook the turkey to make it lighter. I don't like a lot of onion, so I might cut back a little on that too. I also thought that Ritz crackers might be good on top instead of the saltines. I seasoned the turkey with spices instead of adding them to the liquid. These are all minor adjustments. The recipe really is a 5 star for me. Will definately make again.

Shrimp Linguine Alfredo

Reviewed: Feb. 10, 2010
A very good base recipe that can be seasoned to taste. I use unsalted butter so I have to add sea salt at the end. I added 2 tsp. flour to the sauce to thicken it and added more Half & Half than called for. I reduce the amount of linguine to 10 oz since I prefer a thick sauce and lots of it. Tried it with scallops, and it was good as well. I have made several times. This last time I made with Fat Free Half & Half and it was still very, very good.

Jan's Fresh Blueberry Pie

Reviewed: Jul. 17, 2007
My mom loved this pie. It wasn't too tangy, and it chilled very well, not too hard, but not runny either. I cut back on the blueberries or it wouldn't have fit in the pie shell. My mom called and got the recipe from me to make it again, so I would recommend this only if you like lemon and have fresh blueberries on hand. I don't really like lemon, so my 5 star rating is based on my mom's opinion of this pie (I made it for her).

Oatmeal Chocolate Chip Cookies IV

Reviewed: Jan. 20, 2011
Oh my yummy, chewy goodness! Wonderful recipe! I cooked exactly as directed and they turned out so good. I took them out of the oven when they barely started browning on the edges. At first I thought I undercooked them, but it turned out that they were perfect. I loved that the oatmeal was not overpowering. I used large chocolate chips because that's what I had. I think minis might be better because there's not a lot of chocolate compared to regular choc chip recipes and it could "spread out" the chocolate flavor better. Are these really low fat? They sure don't taste it. This is my new favorite cookie recipe. I don't think I'll ever make regular choc chip cookies again.

Very Best Blueberry Cobbler!

Reviewed: Jul. 17, 2007
A true 5 STAR recipe (without any variations needed!!!), except for maybe a longer cooking time. I took mine out and then ended up having to put it back in the oven because the middle hadn't cooked enough. It was yummy! I will make this again!

Blueberry Streusel Muffins

Truly the BEST blueberry muffin recipe I've tried. I loved the light and fluffy texture with perfect flavor. The batter was a bit thick. This is my new standby. Applause to the creator!

Quick and Easy Pizza Crust

Reviewed: Mar. 29, 2011
5 STARS! I made it in two separate batches, as I wasn't sure how much I'd need. I also let them sit longer than 5 minutes, but stayed with the recipe other than that. We wanted individual pizzas, so I bought some cheap foil pie pans and sprayed them with butter flavor Crisco spray then lightly dusted them with cornmeal. We used no more than a baseball sized dough in each. Then we brushed lightly with olive oil, topped with toppings and baked them on the very bottom rack. When they were starting to get done, I took them out of the pie pans and put them directly on the oven rack to crisp the bottoms. To say they were good is an understatement! I used the Exquisite sauce recipe on this site (with a few tweaks) and turkey pepperoni & mushrooms. For the last two, we brushed liberally with margarine and topped with a mixture of 1/3 cup sugar & 1/2 tsp cinnamon and cut them into sticks after baking (leaving them in the pan the whole time because of the butter). We used a bought vanilla glaze to drizzle over them. Not a single bite was left of pizza or cinnamon sticks! The mini pizzas were easy to work with on browning the bottoms because I used a wide spatula to insert and remove from the oven. It was a bit of work because I had 2 pizzas in the oven continuously, while making more, and I had to keep an eye on them. But the finished result was worth it. 2 batches of dough made eight 8 1/4" pie pan size pizzas/sticks. SO GOOD!

Bacon N Egg Pizza

Reviewed: Feb. 10, 2010
Used 6 eggs because when I poured the egg mixture, it didn't exactly cover the whole pan. I also used the bagged hash brown with the onions and peppers. Making it in a glass 9x13 was nice because I didn't have to worry about it spilling over. It was AWESOME! Such a hit and easy to make. 5 stars!

Garlic Cheese Grits with Shrimp

Awesome recipe! Deserves 5 stars. I have made this dozens of times, varying the ingredients sometimes. But no matter what, it's always fabulous and impressive to guests. I prefer Roma tomatoes and extra garlic.

Easy Meatloaf

Reviewed: Nov. 18, 2008
Needed an easy meal and was short on ingredients and this fit the bill! I doubled the topping and only used about a quarter of the mustard suggested. Really didn't need the extra topping since it ran out into the 9x13 pan and just made a mess and burned (not affecting meatloaf taste). I used seasoned bread crumbs because that's all I had and added a little worcestershire powder to the meat. Not bad at all for a super-easy meatloaf recipe. Would have given 5 stars, but mustard is way too much for my taste and prefer a little worcestershire in the topping and a smidgen of garlic in the meat. Still, worth a solid 4 stars.

Chef John's Buttermilk Biscuits

Reviewed: Jul. 11, 2012
Best homemade biscuits I've made sofar - and I suck at biscuits. First ones came out great, second ones not so good. I used 2% milk on the first batch and buttermilk powder & water for the 2nd (according to the directions on the can). I don't keep buttermilk on hand, so I will make with milk again and report back. Would have never thought to brush the tops, it really makes the tops nice.

Cherry Poppyseed Twinks

Reviewed: Apr. 30, 2011
These are different, but good. My best advice is do not overfill with jam and do not overcook. I took them out when they were barely done and they stayed soft and not too crumbly. Dipping my finger (index) in water and making the indentions was the easiest way for me. I used raspberry seedless jam. The poppy seeds add dimension. I would make these again for a party, because they do look nice and taste decent too.

Ann's Dirty Rice

Reviewed: Aug. 10, 2014
Good basic recipe that can be tweaked with extra ingredients. Perfect for a quick fix meal. I used 1 pkg boil in the bag brown rice (just dumped the dry rice in there) and it turned out perfect. I added a half bag of Baja style corn that had too many peppers and onions for our liking to eat plain. It worked great in this recipe. I also topped with 1/2 bag of shredded cheddar cheese. I will be making again.

Baked Salmon II

Reviewed: Jan. 12, 2012
Too much oil and too much salt & pepper. Otherwise, would have been a 5 star recipe! I used a different recipe for some salmon out of the same bag (frozen fillets) and it did taste fishy. This wasn't fishy at all. I cooked til they looked done and they were great.

Shepherd's Pie

Reviewed: Oct. 29, 2006
I cut back on the soup. I used only one can of cream of mushroom and left the other can out. It would have been too soupy with it. I also mashed more potatoes than called for, used frozen mixed veggies and added extra cheese on top. I also put extra seasonings. I'd say this was a pretty good recipe.
