OK, it took me 3 times making this, but it is now a winner. I am almost embarrased to admit this, but in the hopes that it will help someone else, here goes... I had no idea what chili sauce was, and I mistakenly thought this recipe called for hot dog chili sauce - that's what it's called in the chili section, so that's what I bought thinking it was the right "chili sauce." One day I was looking for cocktail sauce by the ketchup and saw Heinz & a generic chili sauce. I had an "aha" moment. I still tweaked this recipe some, but after getting the right chili sauce and with my tweaks, this is now a 4 star recipe as written and a 5 star in my house the way we like it.
Instead of mashing the potatoes, I cubed them in to about 1/2" pieces and boiled until soft. I halved the thyme and sage (used 1/4 tsp), only used a 1/2 cup green onions and 1/2 tbsp dijon mustard. I added another clove of fresh minced garlic (2 total) and one more carrot (2 total). Next time, I will probably add another 1/4 cup of chili sauce (for 1/2 cup total) and cut back to 1 tsp of milk on top of the crust. I may add a third carrot, because we like them.
All the changing is why I didn't give it 5 stars. Even without adjustment, it's pretty close to 5, but I like it my way better, so I chose 4.
