Shrimp Couscous Salad

I forgot to get shrimp but was still looking forward to this salad as a side so I made it without and it was amazing!! It is perfect for summer with burgers or chicken sandwiches. It is so fresh and light and the taste is perfect!

Southwestern Egg Rolls

I have made this recipe so many times and my husband and I love them! I made these once with the egg roll wrappers, but now I always make them with tortillas and bake them I prefer to make them a little healthier and they still taste great! I also make a dip sometimes to go with them - just put cilantro, avocado, ranch sauce packet (dry) and sour cream or yogurt and blend in a food processor.

Almond-Crusted Tilapia

This was a very quick and easy, not to mention delicious, tilapia recipe!! I baked it covered for 20 minutes at 375 and then uncovered it and baked it for 10 more minutes. it was perfect!

Creme Brulee French Toast

I've made this 3 times and everyone who tries it absolutely loves it! I use the hawaiian sweet rolls and I use milk instead of half and half to cut the calories a bit and it still tastes great.

Indian Fish Curry

This has become my favorite tilapia recipe by far! My husband and I used to always go to Pakistani/Indian restaurants but now when we are craving that kind of food I make this. I have even made it for some Pakistani friends who said it was amazing. The flavor and amount of spices are perfect! It also looks very pretty too :) I've also made it without cashews one time because I didn't have any and couldn't taste a difference. I serve it with basmati rice. A friend of mine told me that if you want a stronger flavor/spices to simmer it down a few times (i.e. after the vegetable broth, pour a little water, let it boil/simmer for a little while until it evaporates and repeat several times). I also make it without marinating it first.

Grandma's Peach French Toast

I added 1/2 cup half and half with 6 eggs and it was perfect. I also used cinnamon raisin bread and cut it into pieces and used fresh peaches and blueberries. I also made it this morning and baked it right away. It was so delicious!

Chicken and Spinach Alfredo Lasagna

This is by far the best alfredo lasagna I've ever had! It is super duper fattening though, so I use fat free cream of mushroom and half cream and half milk, I don't put ricotta and I only put mozzarella cheese on top and it still tastes phenomenal, with less calories :)

This was good but it is definitely missing some things. We (Palestinians) make it with bell peppers and shredded carrots. We also fry some almonds and yellow raisins at the end and sprinkle them on top. I don't use the 7 spices either. I use cardamom, cinnamon, cloves and all spice in addition to the bay leaves and dried lime (black lime) instead.

White Chocolate Raspberry Cheesecake

This is my 2nd time making it. The first time I used fresh raspberries and it was great. I also used 2 cups of oreos for the crust. This time I used raspberry jam as I was short on time, but I do not like the taste as much. I don't recommend it as a substitute. And boiling the raspberries the first time didn't actually take that long and the color looks so much better in the cheesecake. Also this time I made it in 2 8x8 square pans so I can cut it into small square pieces for a party.

Chicken Fajita Marinade

This was a great marinade except just a little too sweet. Next time I will definitely eliminate the brown sugar and add a little bit more lime. I also cooked my chicken and the vegetables in the marinade which tasted amazing.

Sausage Egg Casserole

This recipe calls for WAY too much cheese if you are at all health conscious. I used turkey sausage and fat free cottage cheese. I put about 18oz cottage cheese and just a cup of Monterrey jack cheese. It was ok, but it definitely needs some more spices. I ate mine with salsa because it was too bland and that made it a little better.

Egyptian Koshari

You absolutely cannot leave out the fried onions. Everywhere in Egypt serves this with crispy caramelized onions on top and most places have hot sauce and a garlic sauce that you can add, which makes it better (not as bland). In fact, whenever I order this in Cairo I always ask for extra onions.

Tiramisu II

This was the first time I tried making tiramisu and to be honest, it wasn't as great as I expected from all the rave reviews. It had too much whipped cream which overpowered the mascarpone. Also I just barely drizzled the lady fingers with strong coffee and that wasn't enough. Next time I will cut the whipped cream in half and soak the lady fingers a little more. I also will not split them in half, and fold the whipped cream into the marscapone mixture to make it thicker. It has a good rich taste though, perfect with coffee!

Breaded Parmesan Ranch Chicken

It was just OK, nothing spectacular. I couldn't even taste the ranch which was what I was looking forward to most. We made sandwiches with and they were good, but I don't think the chicken would be good by itself.
