Fantastic starting point for any flavor muffin. I have made 3 times. Everyone loves them. Subbed 1/2 C finly chopped rolled oats for same amt. flour; I did add 1 tsp HIGH quality vanilla; and added 1 tsp HIGH quality cinnamon to the batter. Found the topping way too fatty and unnecessary-I sprinkled a little brown sugar, cinnamon and natural turbine sugar on top for crunch and asthetics. I think next time, I'll use buttermilk and reduce the sugar to 1/2C. Muffin trick: Stir batter ONLY until just BARELY blended and then STOP.(this is NOT cake). I make 12 (more reasonable size) muffins. Baked for 17 minutes. Lost a star only for health factor.
