Sassy Tailgate Sandwiches
For both the hubbies and the food snob in me. Original recipe a "10". But open to UNLIMITED substitutions. By "generous" spread of cream cheese; i found that 1/4" is PLENTY. I used the entire container the first time...yuck. A container will make 3 dozen. I always cut the fat by half , and have even subbed some olive oil instead. Have also just made my own melted garlic butter and grated fresh parm on top. Can' go wrong. Tent your foil to cover and you have no worries. Travels well too. Am making again tonight for couples ping pong gathering.

To Die For Blueberry Muffins
Fantastic starting point for any flavor muffin. I have made 3 times. Everyone loves them. Subbed 1/2 C finly chopped rolled oats for same amt. flour; I did add 1 tsp HIGH quality vanilla; and added 1 tsp HIGH quality cinnamon to the batter. Found the topping way too fatty and unnecessary-I sprinkled a little brown sugar, cinnamon and natural turbine sugar on top for crunch and asthetics. I think next time, I'll use buttermilk and reduce the sugar to 1/2C. Muffin trick: Stir batter ONLY until just BARELY blended and then STOP.(this is NOT cake). I make 12 (more reasonable size) muffins. Baked for 17 minutes. Lost a star only for health factor.

Molten Chocolate Cakes With Sugar-Coated Raspberries
Made this twice last month. HUGE Hit! TO DIE FOR!!! Only as good as the chocolate that you use/ I used Callebaut and Ghirardelli bittersweet. I coated 8 ramekins with butter and turbine sugar, then added the batter and refridgerated well in advance; but must be brought to room temp before baking. Ramekins require 1-2 more minutes baking. Put in the oven just as we started cleaning up dinner dishes. Serve right in the ramekin with scoop of good vanilla ice cream. Whipped cream wimped out on the hot cake. Thick batter traveled well/Baked at friend's house.
