Radish Salad With Parsley & Chopped Eggs

This was edible, but not very enjoyable. Not crazy about the dressing, which is pretty important. I'll stick to sliced radishes with goat cheese on crusty bread.

Eggplant Parmesan I

This was delicious and very easy. It took a while to make, but I was able to do laundry, iron and read while waiting on the eggplant to drain and then cook (so, didn't mind the length). The olive oil gave the eggplant a great flavor and made the dish very tasty! I used Classico Tomato Basil sauce and had to use dry basil because I didn't have fresh. Still very good!

Whole Wheat Bread III

My husband is the bread-addict, so I let him rate this one. I prefer quick breads, but this was a good and easy wheat option. (I calculated 35 WW pts per loaf)

Vegetarian Four Cheese Lasagna

I used canned pumpkin and whole grain pasta and they worked fine. I also used part skim cheese. It took me a while to prepare, but it was not hard to cook extra eggplant, etc so that I could make 2 pans at once and freeze one--I'm looking forward to eating the next pan with no work involved.

Baked Pumpkin Bread

I added the extra pumpkin and vanilla, but otherwise stuck to the recipe. It was delicious, moist and only 2 WW points per slice (9 slices per loaf)
