Cranberry and Cilantro Quinoa Salad

I am on a Quinoa kick, and this recipe was great. The only things I did differently was use cumin instead of curry (not a fan of it) and I didn't have any carrots. This was delish cold, I ate it as it or I added about 1/2 cup to an Asian Lettuce salad. I also heated it and put a cube of Laughing Cow cheese and some steamed califlower and brocolli. Love it both ways. My only lil diss would be that it was slightly dry, which was why I probably loved it with the Asian Dressing best. Quinoa Rocks!

Quinoa and Black Beans

Love this....this is so filling and delish I ate it for dinner 3 nites in a row. I only used one can of black beans but that seemed like plenty. Such a great way to add grains to your diet.

Vegetarian Chickpea Sandwich Filling

Love it~ I am on a chickpea bender and this was just perfect! I agree with another commentor that this just gets better as it sits.....leave it regrigerated overnite if you can. Did mine with red onion, celery, red pepper, mayo, dijon and lemon. Ate it on a pita bread and YUMMO!

Baked Kale Chips

Wow....I'm not sure what potato chips you guys are eating, but these aren't ever going to be a suitable substitute. They do cook unevenly, and I did 3 pans full, varying the time each time. Some ended up crispy and some limp. You must have to eat the entire batch in one sitting because the next day, they were limp. Just not my cup of Kale. This recipe makes me sad for vegetarians or people trying to cut calories.

Ultimate Party Meatballs

These are always well received and I usually bring them to 4- 5 gatherings a year..... I use the frozen meatballs because they are fast and convenient....everyone always asks me if they're homemade....sometimes I tell the truth ;)) I also add 1-2 TBS brown sugar and always use the Cranberry Sauce with the whole berries....YUM!

Spinach Salad with Warm Bacon-Mustard Dressing

Made for Christmas dinner and turned out well...there are a lot of steps to this salad, and the dressing needs to be made at the last minute, so schedule accordingly. I eyeballed all the ingredients, including the dressing and it turned out well. The only thing I might do differently next time is add 1-2 TBS sugar to the dressing...the honey didn't give the right sweet/tart ratio for me.

Peanut Butter Cream Pie

Easy Peezy.....I used a store bought shortbread cookie crust. Worked well with this filling, because this pie is SWEET! I forgot to put the milk in and it didn't seem to matter. Also added some Hershey's syrup on top to make it fancy.

Plum Blueberry Upside Down Cake

WOW.....this was delicious. I could only get Pluots instead of plums, found out I had no milk in the house so I substituted half Almond Breeze and half cream, had half the amount of butter called for and it STILL turned out to be the moistest cake ever! Will definitely make again and experiment with peaches and necatrines while they're are still in season.

Zucchini Cornbread Casserole

So good.....I served it with Sloppy Joes and a salad and there was none left! The only change I made was to add less cheese and it still came out great....such a super way to use up all the zucchini.

True Blue Custard Crunch Pie

Very good and so easy to make. The fact that it calls itself a "custard" pie is misleading I think. There is only one egg and altho delish, it doesn't have the typical custard consistency. I used almonds instead of pecans because that was all I had....I agree you need the nuts for the crunch on top. It was so lovely from the oven I took a picture of it!!

Almond/Apricot Coffee Cake

It was good....the only issue with the recipe I had was ending with the apricot jam on top. That was messy when plating the cake....I think next time I would end with the batter being the last thing I added.

Olive Pecan Spread

I thought this was just alright....very salty, because of the olives obviously. And I made it the nite before and my pecans got limp....recommend adding those last minute. Took it to a party and had A LOT left over...never a good sign

Cocktail Meatballs

It always amazes me that the most simple dishes I bring to an event are always the ones that get the rave reviews. I dumb this recipe down even more with the store-bought turkey meatballs.....I always bring home an empty dish!

Chocolate Chip Pie III

While good, it's not the chocolate chip pie I've made before. This came out more cakelike and I'm remembering a more gooey pecan-pie like consistency. I will probably try again with a recipe that uses brown sugar.

Mom's Zucchini Bread

The absolute best.....zucchini bread is a lot of work, but when the hot bread comes out of the oven, it's all worth it. I only used a 2 cups of sugar and it was plenty sweet and we like pecans better than walnuts. Also had to back it for about 10 minutes longer than the recipe...but don't overbake, keep checking with a toothpick to test doneness

These were phenominal....followed the suggestions to marinate overnite and cook longer and they turned out great. They went so quickly I didn't even get a chance to have more than one...SAVE A FEW for yourself!!
