Thai Chicken Balls
These have become a regular meal in our house. I usually make them just as the recipe states, and I often get compliments on them and requests for this recipe. For a healthier take, we bake at 400 degrees for about 20-25 minutes, flipping once in the middle of the bake time. We dip in sweet chili sauce or hotter chili garlic sauce. Our family loves them, including our 4.5 and 2.5 year olds. Great with Peanut Butter Noodles recipe from this site that we add julienned cuke and carrot too for extra veggies.

Morning Glory Muffins I
Just made these this morning for my husband's birthday since they have a version of these at a local cafe that we love. These were spectacular! I did 1/2 cup raisins and 1/2 cup shredded coconut, and skipped the walnuts on top since I was being lazy ;-) Delicious! I would recommend these for any occasion.

Slow Cooker Chicken Taco Soup
Really tender chicken and tasty soup. Ours was more like a chili as I used a large can of diced tomatoes and no tomato sauce, but it was great. We scooped it up with tortillas instead of crushing them into the soup/chili. My only complaint is that the flavor was a little dull. Next time I'll add more chili powder (used the seasoning recipe recommended on here and it didn't seem to be powerful enough to add much flavor) or possibly some chipotle peppers with adobo sauce for a little more kick. I'm not a hot spice freak, but this could have used a little more oomph. But I wouldn't have been disappointed if I had served this to guests.
