Chef John's Buttermilk Biscuits

just made these tonight. followed the recipe to a T, which i don't usually do. PERFECT. and not hard at all! tender, flavorful, a win with my kids. i'll make these again and again! (i used 3/4 cup milk with 2 TBSP of white vinegar, coz i don't usually have real buttermilk around.

White Chocolate Raspberry Cheesecake

i'm just gonna join the fanbase here and say this was amazing. i had a basic cheesecake recipe i put together from various recipes and thought i had it down until i tried this. i did modify it slightly - added a bit of unsalted butter and sour cream to the filling, and used graham crackers instead of chocolate cookie crumbs for the base. but other than that, followed it to a T. it's not my favorite type of cheesecake, but it's my husband's so i made this for his birthday. SO GOOD. i may be eating more of it than he is...!!

Fluffy Pancakes

yep! awesome like everyone says. i used white whole wheat flour, coz it's what i had, put a tad more baking powder in, and added vanilla - otherwise followed to a T. very light and fluffy :)

Salmon Cakes II

just made these for dinner - only changes were i added celery for more crunch and garlic powder for a little more flavor. my amounts were off b/c i used 1.5X6-oz cans of salmon... but it still came out fantastic! oh and i also coated in parmesan. great flavor and will just add more of the flavorings next time. thank you so much! yum!

Cream Corn Like No Other

omg. this is not low fat. and it is sooooo good! i don't think i'll be able to finish my bowl tonight. very rich... i might try making it again with only reduced fat milk and butter, and maybe cream cheese to add more creaminess... also i added shredded mixed cheese coz i didn't have any good parmesan. anyway this is awesome!

Best Peanut Butter Cookies Ever

i did modify this - wanted a recipe with a little flour - so i cut it in half, added 1/4 cup butter and 1/2 cup flour, and baking soda of course. and i used crunchy PB, and added choc chips. sorrryy i know u guys hate it when recipes are modified and then reviewed... but i did use this as the base! and i can't stop eating them... sooo... thank you! :)

Thai Ground Chicken Basil

only giving this a 4 coz i made so many changes, but this was phenomenal! i added onion at the beginning, as well as zucchini and mushrooms, sliced, and added brown sugar and fresh lemon juice/zest and sriracha to the sauce; used some random hot peppers i had on hand at the end with the basil. and then i used it for lettuce wraps. i'm SO glad i found this - a great way to use up basil and a great base recipe! and easy too! thanks!

World's Best Scones! From Scotland to the Savoy to the U.S.

came out great! i didn't have sour cream so i used heavy cream, like another reviewer, and they still came out so fluffy and gorgeous, crisp on the outside. skipped the dried fruit, as i like plain scones. made these for a "high tea" with homemade lemon curd, homemade raspberry jam, and homemade mock clotted cream yesterday - and i'm having a fantastic breakfast right now!

Chicken Biscuit Pie

simple, filling, yummy food. just a few changes - used bisquick mix for the topping, added cheddar cheese and a dash of nutmeg to the sauce, and used frozen mixed vegetables. left out the onion. i made this with fresh homemade chicken broth. i will be making it again!

Mixed Vegetable Bake

a decent side dish. i didn't have water chestnuts or celery, and i mixed swiss and cheddar cheese, and i used breadcrumbs sans butter instead of cracker crumbs. still pretty good. i think it would be better by the original recipe without changes... will try sometime when i have it all on hand!

Bread Pudding II

Very good, though perhaps i should have added more cinnamon - i doubled the recipe and sort of eyeballed the cinnamon. i used 3 cups of milk and one large can sweetened condensed milk, and 6 eggs, and dried cranberries instead of raisins. got rave reviews. thanks so much!

Bacon Quiche Tarts

pretty darn good. i used beef bacon, grands flaky biscuits split in half, and cheddar cheese. used four eggs and upped the green onions, but kept the cream cheese the same, made 24 of them. added crushed red chillies to one batch :)

Leek Potato Mushroom Cheddar Soup

loved this! i made a few changes based on what i had - baked two potatoes and mashed them with garlic and herb boursin cheese. sauteed leeks and mushrooms together, added broth and seasonings, then added the mashed potato-cheese mixture and milk. yummy! will try this with cheddar, too, sometime...

Cajun Seafood Pasta

this recipe is not only great (and quick) but lends itself to variations, which works for me because i never have all of the ingredients. i've made it twice now - last night, i sauteed chopped portabello mushrooms and garlic in butter, added the scallops for a minute, sprinkled with flour and then added light cream and 2% milk. i only use scallops coz the hubby hates shrimp (sadly), and i use whatever cheese i have on hand. plus, i used whole wheat pasta. everything else was the same. i make it spicy :) it is so good! i am eating leftovers right now for lunch...

Garlic Chicken

this was very good, easy to please the hubby. i read other reviews first and seasoned the chicken before dipping it in the garlic oil, and added dried parsley, basil and cayenne to the crumb mixture. served with homemade honey mustard sauce!

Whole Wheat Banana Nut Bread

my first banana nut bread ever, and the first thing i ever made with whole wheat flour! it was delish, though i might add a little more honey next time (personal preference). i made this with melted butter instead of oil... still came out great. thanks!

Quinoa and Black Beans

i've made this repeatedly for my husband and i. we love it as a flavorful alternative to rice dishes, though i make some changes - add chili powder with the cumin, and i use chicken broth. a keeper!

Burmese Chicken Curry (Gaeng Gai Bama)

i really enjoyed this, though it ended up very spicy. i added broccoli and potatoes, coz i had some veggies to finish, and the potatoes overcooked and made the sauce very thick. still good! i don't think i added enough fish sauce, because it wasn't actually salty enough. but i will definitely make this again, perhaps with shrimp?
