Stupid Simple Roast Chicken

Elliot, thank you for submitting this. I am making chicken stew, today, and wanted a basic roast chicken without frills. My lemons are kinda old so I'll probably substitute an onion. Prone to cooking extravagantly, most often opting to open Julia's Book, I am giving this five stars before setting out to cook it because I think many cooks are afraid to publish their most basic, most simple recipes and those recipes are excellent precursors for the apprehensive novice as well as for those of us who need to get back to the basics, once in a while. I'll probably loosen the skin, season and butter underneath. I can't help it. Recipes are suggestions, to me, and I find it exteremly difficult to stick to one. I'll need to keep an eye on it as I cook with smaller, organic roasters and organic chicken ALWAYS tastes more ..... chicken-y. Thanks, again, Elliot!

Lemon Whippersnappers

Well, I made 'em. My boss says they are the best cookie she's ever had. Now, like most of you, I consider a recipe a guideline and can, very seldon, stick to the original. I STRONGLY recommend these additions: 1tsp Lemon Emulsion (or extract), the zest of one lemon AND I added two small bags of dried wild blueberries; a wonderful addition, if I do say so myself. You might want to leave them in a couple extra minutes. Since, I've made this with an orange cake mix and added orange extract, zest of one orange and chocolate chips. I'm glad I added the extract and zest because it balanced out the richness of the chocolate chips. Thank you, Jennifer!

Garden Fresh Tomato Soup

Like most cooks and most of the people posting feed-back, a recipe is a guide. This one is a doozy. Since fresh tomatoes are not available and store-bought are just plain awful (except the Kumato ... very good), I used a 90oz can of San Marzanos with great success! I won't go in to other deviations, I just thought I'd recommend that one in particular.

Fabulous Wet Burritos

Well, I've never been much for cooking with canned foods but I can definitely see some potential for this recipe once I alter a bit to suit my from-scratch methods. This is good because I don't have much luck with burritos and enchiladas. They're usually way too heavy so this recipe provides a good basis for me. Love me some Tex-Mex!

World's Best Lasagna

"It takes a little work, but it is worth it?" I know I'm preaching to the choir, here, but lasagna is a sacred thing and should NEVER be fast and easy ... as was the initial recipe that lead me to this one. And if you have a passion for cooking, we all know it's time well spent. Great recipe, John! I can't wait for my tomatoes to ripen!!!

Cabbage Balushka or Cabbage and Noodles
