Fruity Curry Chicken Salad

Scrumptious! I had to fight my husband to save about a half cup of salad for lunch today... I really would like to see if it's better the second day. Don't see how that's possible. Served it in the middle of beefsteak tomatoes cut into wedge flowers... Pretty, fast, and oh so yummy. It's a keeper. ------- So good I wanted to rate it again! Delish with coconut sprinkled on top. Next time we'll use the leftovers to stuff an avocado for lunch.

Tangerine Cherry Cranberry Sauce

Loved it and followed the recipe... tangerines, too. I was surprised how it thickened up by morning. Delish. Next time will try it with Splenda and dial it back just a bit (Hubs isn't supposed to eat sugar). This was like thick, tangy candy. Chef John, I did not reveal this is an EASY PEASY recipes per directions in the video. The poppin' berry was a great detail, reassuring me that all was right in the pan. And yes we did ENJOY. Thanks bunches.

Beef Tips with Mushroom Gravy

Delicious. Hubs and I both give it 5 stars. Made it with round steak. Didn't have gravy mix, but used Simple Beef Flavored Gravy recipe from this site with 2 tsp of beef "Better Than Bouillon" plus 1/2 cup of cabernet for part of the required water. Also added a can of mushrooms. Can't wait for the leftovers at lunch. YUM! This goes into the rotation.

Beef Tips

Apple Crisp with Oat Topping

This is absolutely delicious. The first two times I made it with cold butter. Today the butter sat out for about 20 minutes before cutting it into the topping ingredients and it blended better and made a CRISPY crisp crust. That's the only change I'd made. The measured ingredients were the same as the recipe. As for the fruit, we have trees full of big baking pears that are ready now so I've been using them instead of apples. Sometimes I throw in a handful of blueberries with the pears. Either way, my guests gobble it up. Tonight's crisp was simply pears with cinnamon and a little sugar sprinkled over them, and the best crispy crust so far. A lovely caramel developed around the fruit pieces. My parents asked me make another one immediately for them to take home. Can't wait to try this crisp recipe with apples, peaches, berries and whatever fruit is in season. It is excellent. Thanks for the recipe. It's exactly what I was looking for.

Bread Pudding II

Never made bread pudding before and this was fast and easy. I used Splenda instead of sugar. Added craisins and a little orange zest. Yummy!

Hot Curried Tuna Sandwiches

Amazing Lemon Scones - Sugar Free

I loved the texture and flavor; they rose nicely in the oven and were delicious warm. Easy and fast to make; ready to eat before you know it. I'd like a bit more intensity in the lemon flavor in the scones and frosting. Either halve the frosting recipe or double the batch of scones! There was more than enough to slather on every bite and we still had leftover frosting. We ran out of scones way too soon. We can't eat a lot of real sugar. Made the scones with splenda and they came out fine. The real sugar frosting was too sweet for us. Next time I'll try a sweetened lemon butter with zest in it instead of frosting; or a lemon-flavored cream cheese frosting. We can use splenda since sugar isn't the main ingredient. All Recipes Cranberry Scones By Anne DeCosta has a great butter recipe that should adapt to lemon zest and splenda. Even though we can't eat the sugar, as is, Angelstar's Amazing Lemon Scones recipe is 5 star. This would be lovely for Christmas breakfast or for a ladies tea. Then by all means make all the frosting and serve the extra "on the side."

Cranberry Scones

Recipe perfectly scrumptious as written. I had to use dried cranberries and will soak them first next time, but the scones were yummy and GONE in minutes. 1/4 cup of the cranberry butter was enough for the half-batch I baked tonight. I used Splenda one-for-one in both recipes (butter and scones). Can't wait to make them again. Thanks for a wonderfully flavorful and EASY PEAZY recipe!

Prosciutto Wrapped Asparagus

Scrumptious and easy! Followed recipe for 8 for an elegant holiday potluck dinner. 2 lbs of asparagus (thick spears) yielded bundles of 5 spears. Take the Neufchatel out an hour early to come to room temp. Instead of spreading cheese on the delicate prosciutto, spread the cheese on the asparagus bundle and wrap the whole thing in prosciutto. EZ Peazy. I didn't blanch the asparagus. Just spritzed the bundles lightly with olive oil; 450 for 15 minutes - beautiful and yummy! Thanks for the recipe. It's a keeper!
