Amazing Lemon Scones

Reviewed: Dec. 13, 2012
I loved the texture and flavor; they rose nicely in the oven and were delicious warm. Easy and fast to make; ready to eat before you know it. I'd like a bit more intensity in the lemon flavor in the scones and frosting. Either halve the frosting recipe or double the batch of scones! There was more than enough to slather on every bite and we still had leftover frosting. We ran out of scones way too soon. We can't eat a lot of real sugar. Made the scones with splenda and they came out fine. The real sugar frosting was too sweet for us. Next time I'll try a sweetened lemon butter with zest in it instead of frosting; or a lemon-flavored cream cheese frosting. We can use splenda since sugar isn't the main ingredient. All Recipes Cranberry Scones By Anne DeCosta has a great butter recipe that should adapt to lemon zest and splenda. Even though we can't eat the sugar, as is, Angelstar's Amazing Lemon Scones recipe is 5 star. This would be lovely for Christmas breakfast or for a ladies tea. Then by all means make all the frosting and serve the extra "on the side."

Pork Fried Quinoa

Reviewed: Sep. 11, 2012
This was scrumptious! We are now quinoa fans. The seasonings were wonderful. I never would have thought to add rice wine vinegar and we loved it. I didn't have ham or green onions, so I made it with red bell pepper, purple onions, and half a large jalapeno. Can't wait to try it again with the specified items. This is a keeper to make often. We can't eat rice or pasta. Hope quinoa works in a number of other recipes. Beef tips? Other stir fries? Thanks, Chef John, for your videos and fun humor. We'll be tryin' the dumplins next cold snap.

Tangy Slow Cooker Pork Roast

Reviewed: Aug. 22, 2012
I wanted to like this, the pork was bland, because the onions kept the meat out of the sauce while it cooked. But we didn't care for the flavor of the sauce, either. We tried adding BBQ sauce on the shredded meat the next day and it still didn't hide the flavor. Maybe we don't like white sugar on pork.

Apple Scones

Reviewed: Jun. 28, 2012
After reading the reviews, I stayed with the recipe on the wet/dry ingredients. Added two small chopped gala apples, and cinnamon, nutmeg, and allspice. The first batch didn't seem to be cooked all the way through; second batch I used the combo setting of convection/microwave and it turned out better. I think what's really missing here from the flavor is the butter... I think the better scone recipe to use for a base is this one: http://allrecipes.com/recipe/cranberry-scones-2/detail.aspx Just change out the cranberries for apples and cinnamon. I used splenda instead of sugar in both recipes and it worked fine. Although my husband like these scones I probably won't use this recipe again. The other recipe is so much richer and the texture was perfect.

Bev's Orange Chicken

Reviewed: May 23, 2012
Easy and fast. We liked it. 5-ounce frozen boneless/skinless chicken breasts were DONE in 30 minutes in the convection oven. Marinated at 15 minutes. Used a whole orange for juice and added the zest. It was yummy. We'll make it again. Thanks for the recipe.

Tilapia Salad

Reviewed: May 23, 2012
I had everything on hand but the avocado and grapefruit. Used an orange instead, which was still yummy. My husband raved about the "secret sauce" on the fish, thanked me for making THIS dinner. The Chinese 5 Spice brought a surprising sweetness to the dish. It's a keeper! Delicious, fast, and easy. Next time I'll plan for it and have the grapefruit and avocado. Thanks for the recipe! --------------- Made this several times now; the husband requests it! Awesome.

Cranberry Scones

Reviewed: May 21, 2012
Recipe perfectly scrumptious as written. I had to use dried cranberries and will soak them first next time, but the scones were yummy and GONE in minutes. 1/4 cup of the cranberry butter was enough for the half-batch I baked tonight. I used Splenda one-for-one in both recipes (butter and scones). Can't wait to make them again. Thanks for a wonderfully flavorful and EASY PEAZY recipe!

Prosciutto Wrapped Asparagus

Reviewed: Apr. 9, 2012
Scrumptious and easy! Followed recipe for 8 for an elegant holiday potluck dinner. 2 lbs of asparagus (thick spears) yielded bundles of 5 spears. Take the Neufchatel out an hour early to come to room temp. Instead of spreading cheese on the delicate prosciutto, spread the cheese on the asparagus bundle and wrap the whole thing in prosciutto. EZ Peazy. I didn't blanch the asparagus. Just spritzed the bundles lightly with olive oil; 450 for 15 minutes - beautiful and yummy! Thanks for the recipe. It's a keeper!
