Pear or Apple Cobbler

This was delicious and so easy! The only thing I would change is add more pears because I used pears from my pear tree and they were small. I would also add more lemon juice because I like a little more tartness. Other than that it was great! I enjoyed the use of the maple syrup, it gave it an interesting flavor.

Easy Vodka Sauce

That was easy! I just added fresh chopped garlic and italian seasoning and sauteed with the onions in butter and a little olive oil. I used light cream becasue that's what I had and it was wonderful! Great sauce! Makes a large amount so you can use for later!

San Marzano Penne Vodka

This was easy and delicious!I made some adjustments. I did not have San Marzano plum tomatoes so I used a can of crushed tomatoes. I doubled the garlic because I love garlic. I sauteed the garlic and spices in a little olive oil before adding the tomatoes to release all the flavors. I used fresh basil because I am growing it in my garden and have an abundance. I had light cream instead of heavy cream so that's what I used. I added about a teaspoon of sugar as others had suggested and it was perfect!

Mango Lassi II

This was easy and so delicious! It reminded me of a Caribbean drink I grew up with made with orange juice, milk, sugar, vanilla and I ice. The only thing I did different was added a little milk, about half a cup because it was too thick. I also used brown sugar instead of white, about 3 tablespoons, and added a teaspoon of vanilla extract. I omitted the ice because I didn't want the watered down taste. Other similar recipes had these minor differences-no ice and milk instead. It was soooo good!

Pineapple Upside-Down Cake

I can't tell you how good it was because my husband ate the entire cake in 2 sittings! It must have been good! I had to double the recipe because the cake pan I had was bigger than 6" (mine was 9") and the original recipe did not yield much batter. I used fresh pineapple instead of canned and had enough juice from the pineapple to include it in the recipe. I just let the sliced pineapple sit in a bowl for a bit and the juices settled at the bottom. Very easy and tasty recipe, and I am not fond of baking, but I would make this again.
