Braised Balsamic Chicken

Excellent way to prepare chicken. Since I was multi-tasking and the chicken pieces were HUGE, after browning the chicken and onions, I put everything into a baking dish and finished it in the oven at 350 for 40 minutes (covered with foil). It was perfect!

Zippy Summer Shrimp

This is the BOMB! I only used 1 pound of 16-20 count shrimp but kept the seasoning quantity the same. To keep it from being so messy, I also removed the shells from the shrimp before cooking. Fast, easy and delicious!!

Spinach and Potato Frittata

This makes for a great light meal. I added a handful of sliced fresh mushrooms and subbed a half a bag of diced 'ready potatoes with onions' and swiss for the cheddar. It was awesome. Used four eggs because it was only two of us and still had enough for lunch the next day.

Four Seasons Enchiladas

I made this a few years ago when I hosted Thanksgiving and I have been asked again this year to make this with the leftover turkey. The key to this is to cut up the turkey and heat in a pan with some taco seasoning (and a bit of water) to add some spice to it. I don't use the beans either. Just lots of cheese!

Summer Style Chicken

There is a similiar recipe on this site GRECIAN CHICKEN that calls for cooking it on top the stove which is better for the summer time. You MUST try adding a good helping of Greek Seasoning (available from McCormick now) and this is a real treat!

Chicken Florentine Casserole

Excellent! My chicken-loathing boyfried even after the leftovers the next night! Taking some of the other reviews into account, I browned the chicken on top the stove and used two bags of pre-washed fresh spinach. I also opted for milk rather than cream. The resulting casserole was a bit 'saucier' than I expected but I cooked it in the oven for about an hour because the pieces of chicken were so huge! However, the chicken was so tender you could cut it with a fork. I never know whether or not to cover a casserole unless the directions specify that, so I put a cover on this one. Maybe that was why it had more liquid. But don't let my results sway you! This is an excellent dish!!! The only thing I 'might' add would be a small amount (1/4 cup) of chopped onion to give more flavor to the spinach.

Garlic Cheddar Chicken

This is great. Even my chicken-loathing boyfriend said it was good, so that's saying ALOT. I only changed one thing and that was that I marinated the chicken overnight in 3-Cheese Italian Salad dressing because I had it and wanted to use it up. So I did that instead of the garlic butter part. Will definitely do this one again!

Balsamic-Glazed Salmon Fillets

Considering the first time I cooked salmon it was awful, we really liked this one. I dont think I used enough of the vinegar because it came out more like a paste and after I covered the fillet with it, there was none left to baste with. But I intend to add this to my collection and make again.

Cabbage Jambalaya

This makes ALOT! The 2 times I have made it, I only had smoked sausage and that was plenty. Not sure if would do hamburger and sausage, we like it with just sausage. A nice hearty, filling meal with hot breadsticks.

Salmon Cakes II

My other half loves salmon cakes, but they always seem mushy inside to me. Using this recipe as a base, I turned mushy to fantastic! I don't want to take away from the original recipe, but I used green onion, grated parmesan cheese instead of cheddar, and threw in a spoonful of chopped pimento for more color. The technique of making the patties ahead of time really helped them stay together. Plus I baked them as others suggested, then lightly browned in a fry pan to make them crispy on the outside. PERFECT!!

Suki's Spinach and Feta Pasta

This sounds very similar to a recipe I make that calls for tomato, onion, garlic, fresh parsley and greek seasonings simmered, then throw in some shrimp and serve it over pasta with feta cheese and black olives (and more parsley) sprinkled on top. I will try this, adding a liberal dose of greek seasonings, as we love that blend! And the spinach in it only adds to the goodness of this recipe. Thanks!

Beth's Tex Mex Dip

This is great; I took it to a family get together with chips AND cut veggies, and everyone liked it with the veggies; I took home all the chips! I also added some chopped red pimento to the top as a garnish, made it look very nice.

Grecian Chicken

I didn't bother with the flour either and this still turned out awesome! But used the seasoning probably triple...we love that blend. Basically pretty easy, mostly healthy, quick dinner idea. The second time I made it, I used zucchini and yellow squash and it still all got eaten! Looked pretty too!

Good casserole dish; easy to fix and get on with other things. Somewhat dry, but maybe I cooked it a bit longer than needed. Next time I might add a small can of tomato sauce and some italian seasoning....it wasn't quite as 'saucy' as I thought it might be. But it sure made alot!! Enough for dinner for three...and leftovers for lunch twice!

Italian Style Pork Chops

Sorry, this was a gloppy, soggy mess. We were expecting a crunchy coating with some flavor and got neither. A waste of good pork chops. Next time I'll stick with Italian Shake and Bake.

Easy Honey Mustard Mozzarella Chicken

Given that my other half thinks chicken is boring, I was glad to see this recipe. I didnt use nearly as much honey OR mustard, and the bacon didnt get 'crispy' but overall we liked it enough to make it again. Also, I had to substitute provolone since that's what I had. Next time I might use the prepared honey-mustard you can buy now because the mustard did overpower a bit.

Pink Lemonade Pie

Awesome dessert idea. However, the only size can of lemonade concentrate available in my market was a 10 ounce can. I used that and, based on previous reviews, I just used a 10 inch crust and it filled it up nicely. I also froze it overnight based on previous reviews. I think it needs to be frozen and pulled out about 30 minutes before serving. I made this for a family get-together and there were NO leftovers. Some red food coloring would have made it really nice and pink, but I didnt have any. It still tasted awesome.

Savory Feta Pies

This was a definite hit. To combat the 'dryness' that others had mentioned, I used a canned of diced tomatoes, slightly drained. This worked well. I also added sliced black olives and used greek seasoning. I got asked when I was going to make this again!!
