Braised Balsamic Chicken
Excellent way to prepare chicken. Since I was multi-tasking and the chicken pieces were HUGE, after browning the chicken and onions, I put everything into a baking dish and finished it in the oven at 350 for 40 minutes (covered with foil). It was perfect!

Zippy Summer Shrimp
This is the BOMB! I only used 1 pound of 16-20 count shrimp but kept the seasoning quantity the same. To keep it from being so messy, I also removed the shells from the shrimp before cooking. Fast, easy and delicious!!

Spinach and Potato Frittata
This makes for a great light meal. I added a handful of sliced fresh mushrooms and subbed a half a bag of diced 'ready potatoes with onions' and swiss for the cheddar. It was awesome. Used four eggs because it was only two of us and still had enough for lunch the next day.
