Carrot Pineapple Cake I

Incredibly, incredibly moist! This is the ONLY carrot cake recipe you'll ever need. I baked this in cupcake liners and ended up with 18 good-sized cupcakes (16 by the time I've typed this up) for about 25min. My husband loved that the sweetness was just right. Yum yum yum!

Grandmother's Buttermilk Cornbread

I picked this recipe over Golden Sweet Cornbread because the reviews for the latter indicated it was rather crumbly. I didn't have buttermilk on hand and used milk and 2 tbsp of yogurt instead. Overall the flavour was excellent, but it gets 4 stars because my cornbread stuck a little to the base of my non-stick pan and it was more crumbly than I expected. Nonetheless delicious! Definitely a recipe to be repeated.

Fluffy Biscuits

Maybe it's because I live in the tropics where it's really humid and it was a rainy day when I tried out this recipe, but my dough turned out extremely sticky! I had to add another 3/4 cup of flour to make it come together. Despite the mini crisis, these biscuits baked up nice and fluffy and got the thumbs up from the hubs. Oh...and I didn't have shortening on hand so I used all butter and added some parmesan for flavor. Went great with a chicken pot pie-style stew.

Fluffy Pancakes

I wanted to rate this recipe 3.5 stars. It cooked and browned perfectly into a dense pancake, but it tasted rather ordinary. I guess after all the raving reviews, I was expecting to be blown away. I would add some flavouring (vanilla, cinnamon, nutmeg) next time. One more thing: I couldn't understand how the orignial recipe (1 cup of flour) can feed 4. My husband and I aren't big eaters, and it barely fed 2 of us!

Bacon Cheese Frittata

Replaced milk with cream because I had an expiring tub, added some leftover bell peppers and used a mix of chedder and mozzarella. Result = yummy! Leftovers made an excellent sandwich filling. Proportions were totally spot-on, giving a moist frittata instead of a fried omelette.

Sandy's Chocolate Cake

Wanted to use up some sour cream so I tried this recipe one night. Cake was very moist but definitely not chocolatey enough! And I added an extra 1/3 cup of good quality cocoa after reading the other reviews. Definitely needs the frosting to up the chocolate taste. Will keep looking for a stand-alone moist chocolate cake.

Double Chocolate Chunk Cookies

this tasted fabulous. extremely chocolatey. but they turned out so flat! after the 1st batch, i refrigerated the dough in hope that the next batch wouldn't flatten out so much but to no avail. they didn't look good enough to give away so I crushed them up to make a yummy cookie crust for a cheesecake. everyone loved the crust. just wish the cookie could turn out pretty.

Butter Flaky Pie Crust

I cut the amount of water and omitted the salt, feeling the dough as I rubbed the salted butter in with fingers. Where I live is really humid so more water would have made a heavy and sticky dough. To prevent shrinkage, I placed the rolled out pastry in the freezer for 15 min then directly inserted it into the oven. Buttery and very melt-in-the-mouth! Used it for a quiche.

Carnation® Quiche Lorraine

Condensed milk is absolutely no substitute for evaporated! In Asia, it's used to make milk coffee and tea so you don't have to add sugar. Quiche is savoury not sweet! If you must find a substitute, cream is the closest. Overall, a very versatile recipe though I like to use chives for colour instead of onions. I usually add some parmesan for added richness as well. Guests complained why I bake only 1!

Quiche Lorraine I

I used finely chopped chives instead of onions for colour, white pepper instead of cayenne, omitted the sugar and added 2 tbsp of grated parmesan cheese. It won rave reviews! only thing was I ended up with too much filling even though I used only 3 eggs because I don't like too firm a quiche! I then baked the extra filling separately as a crustless quiche and that was gobbled up real quickly too. Think I'll use 3 eggs but maybe only 1 1/4 cups of cream next time. Overall - delicious!

Maryland Crab Cakes III

i used less crackers as stated by other reviewers, green onions instead of onions and added chilli chopped finely (deseeded 1st) for colour. My guy doesn't care for celery so i left that out. Even canned crabmeat worked! i love that raw eggs are not used because it means i can shape the cakes and leave it in the refrigerator for a couple of hours beforehand. Only thing is the cakes were very fragile and threatened to fall apart. But nothing a little extra care wouldn't take care of.

Beefy Lentil Vegetable Soup

i threw in a cup of red wine in place of boullion cubes and reduced the water. Left out mushrooms and celery, but added a half cup of barley as thickener and one small finely chopped potato to make it more like a stew. for extra kick, a tsp of cayenne is definitely needed. my partner and i ate 2/3 of the recipe quantity meant for 6-8 pple! hardly any to freeze!

Urban Legend Chocolate Chip Cookies

I make these all the time but omit the grated chocolate and nuts. I also increase the vanilla by up to three times for more flavour and add 1/2 tsp more baking powder for a higher cookie. The sugar makes the cookie crisp but you can safely reduce the amt (either brown or white or a mix) by 1/3 cup so it isn't overly sweet.

Golden Sweet Cornbread

Used melted butter and added just over 1/3 cup for a buttery taste. Could just eat it by itself! Yummy! Texture was great. Didn't crumble apart!But for some reason I could actually taste the salt. Would probably cut it down to 3/4 tsp next time. Also added 1 tsp of vanilla extract and cut the sugar to 1/2 cup.

Linda's Awesome Brownies

Pick this because of the few ingredients already available in my pantry for a midnight snack.I halved the recipe and baked in an 8x8 pan. Good texture. Outside was chewy and inside fudgey if you don't overbake it. Flavour wasn't chocolatey enough though. Next time I'll throw in some cocoa or maybe more chocolate.
