Irish Potato Pancakes

I doubled the recipe for my family of five and they ate the entire thing. Instead of green onions, I cooked a chopped yellow onion to golden brown. I also cooked the bacon first before chopping - too difficult the other way. Added salt and pepper to the batter. I served these with corned beef along with sour cream and sauerkraut

Central American Tacos

Added adobe seasoning to the potato mixture. I also added a little sriracha sauce to the potato mixture as well as the green sauce since I didnt have any jalepenos. Like others, I added lime juice. Next time, I will add only two potatoes -too much of that ingredient. Otherwise, very good.

Award Winning Chili

My husband loved,loved it - think he liked the bacon and steak sauce flavoring in the chili. I always make my chili with chuck - stewing meat rather than ground beef. I cooked the beef in a covered skillet longer to get it tender. I also used red wine, added some water, and used more red pepper flakes - used black beans as well. I think next time, I would pre cook my onions with some garlic. I garnished with lime, sour cream, and extra chopped cilantro. Thanks for a great recipe!

Citrus Scallops I

I used green pepper instead of red and that worked fine. I didn't have oranges but I added a few tablespoons of tequilla about half way through the cooking of the scallops. Cilantro gave it great flavor with the lime.

Best Cheesecake on Earth

My father would bring home a cheesecake from an Italian bakery that was so light and creamy. This recipe is the closest to the tast of that. I make a similar recipe with 3 packages of cream cheese, but the ricotta makes this one lighter. I added a teaspoon of lemon extract and I lined both the inside and outside of the pan with foil - no water leakage at all.
