Creamy Pesto Shrimp

WOW! We all loved it. I used 1 T flour and 1 T butter melted together and then added 2 cups of 1/2 & 1/2 since I didn't have cream on hand. Saved a few caloried, but the taste was awesome. My 5 yr old declared this a Keeper!

Chewy Peanut Butter Chocolate Chip Cookies

Made these for my husband to take to work, and they were a huge hit. I am not a fan at all of peanut butter, but I do like these cookies! I've made them twice already and will be taking them to a family function this weekend. I push the center of the dough down a bit before putting them in the oven. They come out perfectly shaped.

Pumpkin Chocolate Chip Cookies I

Easy to put together, but considering how the amount of spices going into these cookies, there isn't much flavor. Soft cookies - disappointing flavor. I won't make these again...sorry.

Coconut Poke Cake

I made this for a pre-Aruba vacation party and everyone loved it! I made it exactly as was written. This is a nice alternative to the Better Than S** cake that everyone also loves.

Chocolate Coconut Bars

These were GREAT! Similar in taste to 7 Layer Magic Bars, but I loved that you just mix everything together and bake. Less crumbs dropping as you eat these. This is a keeper.

Restaurant-Style Tequila Lime Chicken

I used 1/4 CUP of tequila as others indicated and then followed the recipe exactly. WOW WOW WOW WOW I left off the toppings for my 4 yr old, and she loved the marinated chicken. Hubby & I went nutso over this recipe. I made it with Mexican Rice II. For leftovers, I sliced the chicken, used a bit of the mexi-ranch, cheese and rice rolled into a tortilla - it made really great rollups! I've passed this recipe on to a couple other chicken lovers who had great results with this one, too. THANKS!

Chocolate Waffle Cookies

I brought these to Thanksgiving and people raved about them and the unique look. I sprinkled just a bit of powdered sugar over the cooled cookies. They sort of had a "snowflake" appearance. These don't have your typical "cookie" texture, but they are good. They're also very good as a base for a dessert - waffle cookie, scoop of ice cream, and hot fudge.

Gingerbread Waffles with Hot Chocolate Sauce

This makes the whole house smell great for a few days! The batter is really thick and the waffles are so yummy. I made these for breakfast,so I didn't want to use the chocolate sauce. I used Lemon Sauce I from this site, and it was great with these waffles. I think these waffles would be great under a scoop of ice cream, too.

German Lentil Soup

Mexican Rice II

I didn't have tomato sauce, so I used enchilada sauce. Very good and really easy to make. I made this to go with Restaurant-Style Tequila Lime Chicken from this site. With the leftovers, I sliced the chicken, added some of the mexi-ranch dressing from the chicken along with this rice and cheese then rolled everything in a tortilla - great leftovers!

Chicken Tequila Fettuccini

Pumpkin Crunch Cake

I also cut the topping in half, and next time I will try cutting the butter into the cake mix to get more of a crumble topping. This is like a pumpkin pie with a crunchy top. It was much better the second day and after - so make it ahead!

Mocha Cheesecake Brownie Bars

Wow! This was great - made it for hubby's bday and the 4 yr old loved it, too! I made it exactly as the recipe was written, except I omitted the sour cream topping and used whipped cream and chocolate syrup to top it as others wrote. This is a keeper! Be sure to cut pieces small as this is super rich!

Ribboned Fudge Cake

I made this for an extended family dinner, and everyone loved it. I put the cake pan on a cookie sheet to prevent any spill-over, and I'm glad I did that as it really rose during baking. I added a chocolate glaze because part of the cake stuck to the pan when I turned it out - my problem as my bundt pan has a tendency to do that.

Turkey Delight

Wonderful! I had half regular stuffing and half cornbread stuffing and both sides tasted great. Never thought about layering all these yummy things together in a casserole and didn't think it would make much difference, but it did. My dd4 doesn't eat these things on their own, but she did eat everything but the turkey in this dish!
