Mushroom Orzo

Okay, I made a number of changes, but I think I still got the gist of this recipe. I used a whole package of mushrooms. I also used chicken broth instead of water and fresh garlic instead of powdered as other reviewers recommended. I reduced the parmesan to 1/4 of a cup. and the butter to 6T. This turned out very good. My family loved it! I didn't have orzo, but I did have cut spaghetti so I used that and cooked it as if it were risotto (small amounts of liquid added and absorbed before adding more liquid). I think this would work well with short grain rice, arborio (risotto) rice, orzo, or the cut spaghetti. I also think it is very good without the parmesan if you don't have any on hand. I can't wait to make it again to serve with steak and asparagus. Yum! All in all, a great recipe to tweak to your own taste.

Kalamata Olive Tapenade

This was a very good recipe. But, I have to agree with a previous reviewer that the lemon makes it a bit "sharp." Next time, I would put in 1/2 to 3/4 of the lemon juice and see if that mellows it enough. I also omitted the salt. Another small change was that I blended all of the ingredients together into a puree, except for the olives. I hand chopped them and recommend others do as well. I will be making this one again. I love how I can make a big batch and don't have to rely on the little jar at Trader Joe's anymore!

Old Fashioned Onion Rings

Awesome onion rings! I do want to figure out how to season the panko crumbs to get some more flavor in there. I bet this recipe would be awesome for fried zucchini too!

Best Spinach Dip Ever

I love this recipe. My family loves it too. The only changes I make are leaving out the water chestnuts and using the whole package of frozen spinach. It is my go-to dip recipe! Believe it or not, this dip is one of my weight loss secrets too (when made with light sour cream and light mayo). If I limit night time snacks to tangerines, veggies with a little dip, and raw almonds, the weight comes off and I don't feel deprived!

Pizza Dough I

I made this crust on a whim as a late-night pizza. I added garlic and dried basil, but otherwise followed the recipe exactly. My crust was thick, doughy, and completely unleavened. I think this is a good basic recipe, but next time I'll proof the yeast and take the time to let the dough rise for at least 30 minutes.

Paneer (Home Made)

I actually haven't made this recipe, but wanted to respond to DaraFG. The probable reason your milk didn't curdle is because you are using Ultra-Pasturized milk or Ultra Heat-Pasturized milk. UP and UHP milk will not set into curds due to the high pasturization temperature. I hope this helps. Milk that says only pasturized on the front will work. I hope this helps.

Collard Greens and Beans

These are by far the best collard greens I've ever eaten. Recently I had a hankering for collard greens and went down to the Whole Foods deli. Theirs were disgusting. I had to throw them out. Bad collard greens exist out there. But these blow me away every time I make them. I got my picky family turned on to them, and my new housemate, says to me, "Those are collard greens? How do you get them to smell so good?" Yes, they are that good. Kind of like a cross of collards with baked beans. I LOVE this recipe.
