Burnt Butter Rice

Elegant Chicken

Got this recipe from a cousin about 15 years ago and everybody loves it. I always use the jarred chipped beef and rinse it before using to cut down the salt, as do some of the other reviewers. Secure the bacon on the breasts with toothpicks. If cooked long and slowly, the bacon just disolves and adds great flavor. Thanks.

Shoepeg Corn Casserole

This is a family favorite. I use only 1/2 cup of sour cream and for the topping use crushed cheese crackers mixed with a small bag of slivered blanched almonds mixed into the butter. Watch the salt because the cheese crackers are salty. Also use sharp cheese. Enjoy.

Pumpkin Cheesecake in a Gingersnap Crust

This was a big hit! I used pecans instead of hazelnuts and made a Maple Pecan Glaze for a topping. In medium size saucepan, combine 1 cup (1/2 pint) whipping cream and 3/4 cup of pure maple syrup; bring to a boil. Boil rapidly 15-20 min. or until slightly thickened; stir occ. Stir in 1/2 cup chopped pecans. Cover and chill. Stir before serving. This is good over ice cream, too.

Twice Microwaved Potatoes

The method here is what's so GREAT! I had surgery on my hand, couldn't use a potatoe peeler, a knife or even the" boil and then skin" potatoe method. So, I just microwave, cut in half, scoop out and mash. Great method for any kind of mashed or slightly mashed potatoe recipe.Have even used it for Pot Salad, with different ingredients of course. Thanks.

Cream of Broccoli Soup II

German Potato Salad

Good recipe. Very similar to one I have from German friend. We gently cook a chopped onion the the bacon drippings and at the end of mixing all sauce ingredients add 2 tsp. of Angostura bitters. The bitters give it a really great subtle flavor. And a bottle of bitters lasts forever.

Warm Crab Dip II

I baked this in a hollowed out round bread loaf, reserving the the removed bread chunks for dipping, and baked it with the heated filling 'till the bread was lightly toasted on top. Yummy! Thanks
