Menu-building Challenges--week one

It is pretty challenging to create a menu for family which includes special needs--no tomato, only fish and chicken, no shell fish, no milk or cheese, and no nuts (except Almonds, which are not really nuts!
I did pretty well this week. Though many recipes contain forbidden items, I will think of ways to separate cooking process without those ingredients. Some will be particularly challenging.  
  • Lamb Stew without Lamb?   Probably will set aside ingredients for one person sans lamb and  cook that batch with chicken.
  • Tortilla Soup without tomato?  Maybe just purchase some ready-made soup for James that does not contain tomatoes....
  • Twice baked potatoes with out cheese?  prepare separate batch without cheese in individual baking dish.
We also have guest arriving this week.  Becca on July 10 (staying for a week) and Amy with Eloise and Isabelle (staying for a month).  Becca and Amy with help with meal prep.  I am not sure what the girls will and won't eat--so this week will be a trial by fire process.

We survived. It turns out not too be too difficult to juggle ingredients and remove and redirect the finishing of most products without the forbidden wheat, or cheese, or milk or yucky (to some) broccoli!
