Pecan Pie V

It was very good - won second place in a pie contest. All I did different was add about 1/2 tsp of cinnamon and some fresh grated nutmeg. I definitely had to protect the crust after the first 15 or 20 minutes because it was already getting dark. I took it out at 45 minutes total cooking time and the center ended up not setting completely - it had the consistency of caramel. Next time I'll probably cook it 10 more minutes.

Southern Candied Sweet Potatoes

I have trouble getting this to consistently turn out right, but when it does, it is amazing. I think the variance may have to do with the yams themselves, or perhaps I cook it slightly different each time, I don't know. . .in either case, it's a good starting point.

Split Pea and Ham Soup I

I added two stalks of celery and one large carrot, a bay leaf, some thyme, and a T. of whole grain mustard and a T. of chicken base. Also added about 1.5 lbs of yellow and green peas. It turned out awesome - very quick and easy with a frozen left-over ham bone from Christmas!

Mom's Zucchini Bread

An awesome recipe! I followed it almost exactly, except I did 1/2 whole wheat flour and 1/2 all-purpose flower. I also used Pecans instead of walnuts because of allergies. It turned out very delicious and my kids loved it! Great way to get some veggies into them!

Army SOS Creamed Ground Beef

The family liked it! We've had it several times and served it on something different everytime-Toast,potatoes, or rice. We added a some seasons that cater to our New Mexican taste buds (Tabasco, chile powder, or green chile), but other than that it is great.

To Die For Blueberry Muffins

This is such a simple and delicious recipe. I make these for breakfast often, and to make them healthier I use freshly ground whole wheat flour (ground fine) and omit the sugar topping. However, for special occacions we love adding the topping.

Garlic Prime Rib

Absolutely awesome! We've tried four other prime rib recipes from this site and TV, but this is definitely the best! We only had a 3.5 lb roast, but we used about 3/4 of the marinade and it turned out spectacular! Thanks for the great recipe!
