Zucchini Pasta II

Success! The first words out of my husband's mouth were: "How many calories are in this?" then he said: "My wife can cook!" This recipe was absolutely delicious and the reviews that stated it is tastless are inaccurate. I more than doubled the recipe and used leftover BBQ chicken. I took the advise of others and added two cups chicken broth and some white wine. I added three fresh tomatoes from the garden and used a whole package of lite cream cheese. The sauce was too thin, so I thickened it with corn starch. Also as suggested by others, I topped it with mozarella cheese and instead of baking in the oven, I warmed it in the microwave until the cheese was melted. Don't omit the red pepper flakes, for that's the secret ingredient :)

Texas Coleslaw

We loved it! I had all the ingredients and used prepackaged coleslaw mix. Instead of the green onion, I substituted a whole white onion, which I chopped in the food processor with 6-8 radishes. Delicious!

Thai Noodles and Chicken

Delicous! I was skeptical of the Cream of Mushroom soup in the sauce, and was delighted with the outcome. Recipe as is a perfect. Any type of noodle can be used, I used spirals because that's what I had in the cupboard. I look forward to making this again.

Cabbage Success

This was surprisingly delicious! As suggested by another, I added 2 tablespoons of flour to the milk mixture and the sauce was nice and creamy. I also added lots of salt and pepper. I'll definitely make this again.

Wow! Sweet and Sour Sauce

Wow! is the right name for this recipe! I made it to accompany my meatballs for an appetizer at a dinner party and everybody LOVED it! The recipe makes quite a bit and I had to get creative throughout the week to use up all the yummy sauce and ended up freezing some. Next time I will make half the recipe. A definite keeper!

The Supreme Shepherd's Pie

A yummy and delicious way to use the pot roast leftovers! I didn't measure, but used all the leftover pot roast, stirred in the leftover cooked carrots, frozen peas and as suggested by another a can of creamed corn. Topped with a layer of sliced red onion and then poured all the left-over gravy on top. For easier spread-ability, I warmed up the left-over mashed potatoes and layered on top. And for extra yumminess, sprinkled shredded cheese on top. Cooked for an hour with tin foil (I sprayed cooking spray on tin foil to prevent sticking). This tasted better to me that the pot roast did the previous day.

Slow Cooker Macaroni and Cheese I

I made this for a New Year's Eve party and it turned out great! I love the idea of not pre-cooking the pasta first. Would have given it 5 stars, but I added all of the extra spices mentioned by others, and I made magic happen when I generously sprinkled what I thought was ground cumin and came to realize it was ground cinnamon instead. Extra spices, including red pepper flakes makes it quite tasty. I will definitely make this again.

Asian Salad

Thank you Juanita! Not only I, but everyone else LOVED this recipe! Other than substituting 2 lbs. prepared coleslaw mix for the napa cabbage and adding the ramen flavoring packets to mix, I followed the recipe exactly. I couldn't believe it when my party of 6 devoured every last bite. This was a BIG hit!

Sally's Spinach Mashed Potatoes

Totally awesome! I added a handful of whole garlic to my potatoes while they were boiling. I also sautéed lots of garlic and a whole onion and added fresh spinach. I didn't have sour cream, so I mashed the potatoes and garlic with a little coconut milk. And I took the suggestion of other reviews and added French's Onions on top to bake. I don't think I'll ever want boring plain mashed potatoes again.
