Honey Mustard Dressing II

Overall good consistency, nice and simple flavor...but boring. To spice it up I doubled the honey and mustard, added 2 pieces freshly grated garlic and sprinkled salt and pepper. You can add a few tbs oil if it is too thick for you.

Baked Kale Chips

Awesome flavor and texture (but waaaaaaay too much salt! Should be just barely a pinch dusted over the entire pan.) I also lightly dusted with garlic powder. Great alternative to potato chips while satisfying that crunchy/salty craving. I'm going to experiment with different spices like zahtar and maybe even a touch of cayenne pepper.

Easy Lasagna II

Awesome and tasty even with healthy adjustments! Love that the noodles do not need to be cooked separately. We used whole wheat noodles and substituted ground turkey (we're watching cholesterol) and added more (heart healthy, low sodium) sauce since turkey is drier than beef. Also added fresh grated garlic. We used all low fat or fat free cheeses and it turned out fabulous! Definitely a new go-to recipe!

Summer Radish Salad

Yum! Different and refreshing. The dill is a nice touch. I subbed 1 tbs applesauce and 1 tbs orange juice instead of adding sugar, and also added chopped celery. Excellent way to mix up the menu and looks great on the table!

Baked Buffalo Wings

Excellent flavor! Nice texture. YUM! To make this recipe even healthier (which is why I was looking for a baked wings recipe) I used whole wheat flour and cut up boneless/skinless chicken breasts and boneless/skinless thighs into fourths to make "wing" size pieces. As others have mentioned, the secret to crispy wings is definitely DRY wings and plenty of fridge time. I also made a dipping sauce with 16oz. plain low fat yogurt, mix in 1 mashed avocado and a pack of low sodium ranch spices. While nothing can truly replace the greasy goodness of chicken skin and oil, this is definitely close enough to satisfy a wing craving without blowing your diet!
