Chocolate Truffle Cookies

Raspberry Chipotle Sauce

Although I did not follow the recipe exactly - I have gotten nothing but raves!! I used an 18oz jar of raspberry preserves, two cloves of garlic and 1 large jalapeno pepper, 1 tablespoon olice oil, and 1/2 tsp of chipotle chili powder. I sauteed the jalapenos and garlic in the oil until soft and added the rest and heated through. Served over cream cheese with crackers. DELICIOUS!!!

Mushrooms with a Soy Sauce Glaze

This recipe is SO awesome!! We have been looking for a good sauteed mushroom recipe that matched the ones at Outback Steakhouse for years and we finally found one!! This is a wonderful topping to a grilled steak. My husband is in HEAVEN!!

Spicy Chipotle Turkey Burgers

OMG!!! This was absolutely incredible. Only changes I made were to add in some cumin and 2 tablespoons of the adobo sauce along with the pepper to the meat mixture and I used fresh onion and garlic. I also replaced the mozzarella cheese with pepper jack. YUMMY!!!!!!!

Garlic Salmon

Giving this four stars only because I did not follow the recipe totally. Did not have fresh lemon or fresh dill on hand so I made a marinade of olive oil, lemon juice, dried dill and cajun seasoning - let this sit for an hour and then baked as directed. It came out really good - very moist and flavorful. I have also made this using dried basil which was also very tasty.

Clam Sauce with Linguine

This has become a new family favorite at my house. I did follow some others suggestions such as I did add in a couple extra cloves of garlic and added in a splash of white wine to give the sauce some depth. I also replaced the parsley with a some fresh basil - wonderful!! Can't have this too often 'cause this is not really "calorie friendly" - but a great "cheat treat" every once in a while. Make sure you have some crusty bread to serve with this - the sauce is out of this world

White Chili I

This is such a good recipe. I did make a few changes such as I replaced the green chilies with a can of tomatillo (green) salsa. I added in a can of corn (drained) and a squeeze of lime. A nice change of pace from the traditional chili. Family loved it.

Cowboy Hash

My family LOVES this recipe and I am giving this 4 stars only because I made several changes to accomodate our family's taste. I add in a small onion and a clove of garlic to the ground beef when cooking. I also add in an 15 oz can of tomato sauce as well as some cumin and also some cilantro. Finally, I replace one of the cans of ranch-style beans with a can of black beans. We serve this over rice as suggested. Such an easy meal that can be made ahead of time and reheats well.

Black Bean and Corn Quesadillas

My husband - who never cooks and is a picky eater found this recipe and...WOW!!This was wonderful. We did omit the brown sugar and red pepper flakes and instead added cumin, cilantro and chipotle chili powder. We also added in slices of cooked chicken breast. Such a great starter recipe that is easy to "mix and match" with other flavors. Even the kids loved this. Will be making this often!!!

Broccoli Crawfish Cheese Soup

Made this for dinner last night and it was wonderful!! I did substitute cream of shrimp for the cream of celery and I really recommend trying this. It gives the soup a rich seafood taste that just adds depth to an already delicious soup. I will definitely be making this again. Thanks for a super recipe!!

Amy's Garlic Egg Chicken

WONDERFUL!! This is one of the best chicken recipes I have ever made. I cut down on the garlic a little and used one extra egg yolk and seasoned the mixture well while it marinated with the chicken. I also used italian bread crumbs for extra flavor. My chicken came out SO moist and was absolutely delicious. My family loved it and we have made it several times. Thanks Amy!!!!

Luscious Slush Punch

I made this punch for a bridal shower last weekend and it was absolutely GREAT!!! Very sweet and tangy and just delicious. We received so many compliments from our guests. I do agree with the suggestion about giving the punch plenty of time to defrost and get slushy - it is hard like a rock out of the freezer and it would have taken forever to "slush up" in the punch bowl on its own. We popped the bags in the microwave turning over after each cycle and it was perfect. Thank you for this recipe - we will definately make this again!!
