Seven Layer Tortilla Pie

SOOOO GOOD! I took some others advice and added a can of green chilis to the black bean mixture, mixed some pepperjack cheese to the cheddar, added an exta teas. of garlic, 1/2 teas. of cumin and baked the first four tortillas as well. Next time I will use a layer of veggie meat too. I ended up putting this in a casserole dish instead of a pie plate and it worked very well! Just make sure you use a deep one!

Creamy Veggie Fondue

Excellent!! We started eating before we realized we forgot the cream cheese! The cream cheese helps give it a thicker texture, but it was great without it too!!

Creole Shrimp and Pasta Meuniere

So quick and easy, and an amazing taste! I substituted the vegetable oil with olive oil and added 1 1/2 teaspoons of garlic while cooking the shrimp. Thanks for sharing the recipe!

Easy Chicken in Wine Sauce

Very quick and easy! I also marinated the chicken in white wine and garlic for two hours prior to cooking. I sauteed mushrooms and added provolone to make it a smothered chicken. Thanks for all the reviews and suggestions!!!

Tofu and Veggies in Peanut Sauce

Absolutely fantastic! I added red pepper flakes while sauteing the veggies and will decrease the peanut butter next time, but this is a new, quick easy favorite!

Taco Stuffed Shells

This is a favorite!! It was easily made vegan by ising Yves Mexican soy crumbles and Daiya "cheese". I bought refriend beans with green chilis to give a little kick. I think next time I'll add black olives...otherwise it's perfect!!

Garlic Cheese Biscuits

WOW! These are absolutely delish! When I first served them my fiance took a small piece off to try one, and then moved the plate next to him to get a bigger bite. The only reason I don't give it 5 stars is because it does stick to your ribs a little, but it's worth working with. Thanks!

Zucchini Casserole I

Very good taste, although if you plan on using some for leftovers don't put in any breadcrumbs or cornflakes because then it turns into mush. We're big fans of eating leftovers in our house, so next time I'll omit breadcrumbs/cornflakes.

Yam Soup

I used this as a base recipe. I added more veggie broth and water to sauteed leeks and garlic. I also added some brocolli and beet greens. I tend to prefer creamier soups and I found using my food processor on a few ladels of soup when it was near done helped to "bulk up" the soup. Only 4 stars because it was a but too sweet for me.
