About this Cook
I'm a nurse, married with a dog, no kids. I have a big extended family. I think my cooking is OK but I get lots of compliments. My husband said he thinks I'm an expert but I just cook to have dinner after work and so have fun. My siblings also love to cook so it's fun to learn from each other and come up with new ideas. I also have a Certificate in Genealogical Studies and am a member of The Mayflower Society.
My favorite things to cook
Baking, Mexican food, comfort food. I like to perfect dishes that I like and keep working at it until I'm satisfied. Right now I'm working on trying to get a really good homemade, dense, moist cake. The best one I ever had was my wedding cake but that bakery is now out of business. :( I'd like to try smoking meat and working on BBQ this summer so I guess I need to get a smoker first!

Typical, nothing out of the ordinary.

Thanksgiving Turkey, Cassoulet, a wedding cake- two tiered for my sisters wedding, Chicken Vesuvio, Apple Pie, Crimson Pie, Chocolate Blackout Cake.

Fudge Frosting
Since I'm a serious chocoholic the original recipe wasn't fudgey enough for me. I put in bitterweet 60% Cacao chocolate but it seemed too sweet and not dark and chocolaty so I added a 1/4 cup of Hershey's Special Dark unsweetened cocoa and bingo! It turned dark and lushishly chocolate! It cut down on the sweetness and gave it so much more depth. I will use this recipe again with the added dark cocoa. It's easy to make and spreads beautifully on cake.
