My favorite things to cook
In 2012 I began reading everything I could find on plant based diets including The China Study, Dr. John McDougall's books, Engine 2 Diet by Rip Esselstyn. Also watched the documentary Forks Over Knives several times. The standard American diet is devastating to our health! To my real surprise, I found a deep interest in experimenting with plant based cuisine. I found it a challenge, a delight and just great fun. I was amazed that I could enjoy food even more by eating this way because it is healthy. Anyway, it is a work in progress. I still struggle with sugar!!

Basic Vegetable Stock
I love this recipe because it uses common vegetables. I use organic, make a big batch and freeze it in canning jars. This is the best recipe for veggie broth I have tried. Thanks Stan for sharing this great recipe!

Chef John's Meatless Meatballs
Yummy! I have tried store-bought phony meatballs & have never found one I liked. These are really good. They were time consuming to make, but I made a double batch, so that did take more time. I urge you to watch the video before attempting this recipe because Chef John is not only cool & has an awesome voice, he also has great tips for making the best meatballs. I chopped my mushrooms, as he said, to about the size of a kernel of corn, but wish I would have made them a tad smaller. I sautéed my onions separately only because I was feeding anti-onion eaters. I also used half eggs & half egg substitute made out of flax meal and water. This recipe is a keeper!

Artichoke Salsa
This was phenomenal. I might have to place this in the top 10 recipes that I like from this website. It was easy to put together & I would use it in a dozen ways. On a pizza crust without sauce, just brush the crust with a bit of oil & spread this salsa on & bake. I would definitely use it on bruschetta as others suggested. I think I would also try it on lettuce in place of salad dressing. I have a few cans of artichoke hearts in my cabinet & next time I make this I will save the oil from the jar & use it to marinate the canned artichokes. I know I will be making this a lot & it will save me a few pennies since the canned artichokes are less expensive. Can you tell I really loved this recipe??!! Thank you Julie for posting it!
