Spicy Party Pretzels

My son, now 12, has begged for this recipe for every school or Scout party for at least two years. I have had many teachers, Scout leaders, and kids' parents declare their love for it and beg for the recipe!! We keep the recipe as is BUT at 250 degrees, stirring after fifteen minutes and then each five thereafter, usually for a total of 35 minutes. Key is to scoop liquid from the bottom each time to recoat the pretzels-once the liquid at bottom is gone, they're done! Thinner salty pretzel twists work best for us. A belated bravo for a family favorite!

Jalapeno Popper Spread

A HUGE hit, especially with teens and guys! We spread it on pre-sliced baguette rounds. To make it more like the deep-fried poppers in restaurants, I have been sprinkling the top with Italian breadcrumbs (enough to barely cover) and then spritzing that with butter spray, before baking. This recipe is a must for the next game!

Green Bean and Portobello Mushroom Casserole

Racing home from church on Easter Sunday, we had to "heat and run" to get to Grandma's house for dinner--thus had to modify this recipe--5+ stars nonetheless. Having forgotten fresh mushrooms, used canned; used real bacon bits instead of frying; and mixed cheese in with the rest instead of using as topping at the end (battle for oven time). Next time I'll try frozen or fresh green beans (hate mushy veggies) but regardless, the combination of the nutty crunch and the spices brought this recipe rave reviews, from fussy uncles to testy teens...

Classic Macaroni Salad

AWESOME! Was looking for a mac salad to accompany a dish modeled after a famous local eatery--a deep-fried half chicken liberally doused in the restaurant's signature "Sassy Sauce"--the "bird" is placed atop two slices of white bread, with mac salad on the side to cool off your taste buds off between bites. This mac salad was not too mayonaiss-y... it was tart yet sweet; perfect. Would not change a thing (except next time I will maybe add more celery and/or red bell pepper!) It was great combined with the "birds" but would be a super side dish with any picnic-style fare. It lives up to its name: CLASSIC...

Slow Cooker Western Omelet

Made this several times, and have never had the trouble others noted with burning/overcooking/dryness...now I am wondering if it is because each time I use egg substitute instead of cracking a dozen eggs? (I'm a lazy cook!)...maybe the more liquid/fluid nature of the EggBeaters helps permeate the other ingredients? Still tastes great! I do add a full 2 cups of cheese, 1/2 tsp salt and 1/4 tsp pepper. For this morning, I prepped one crock pot with sweet Italian sausage and a bit of onion and regular eggbeaters...in the other, red and green peppers, onions, fresh mushrooms, and southwestern style eggbeaters. I love, love the breakfast burrito idea--this is how we serve them every time! (build-yer-own, with small flour or whole wheat tortillas, salsa, green salsa, sour cream, shredded cheese, and tobasco as desired). Family/Friend Fave!

Spicy Squash Casserole

Hubby's absolute favorite comfort food. I do not slice the squash; typically I use zucchini, and employ a chopper that dices into narrow rectangles; I do cheat and use a can of chopped jalapenos instead of fresh;and when out of crackers I have used Italian bread crumbs (with a light spritz of butter spray) with equal success. But the combination suggested for the casserole is perfect. I am nervous, but I am going to try to double the recipe for a potluck-- wish me luck!

Slow Cooker Chicken Taco Soup

This is incredibly easy on top of being so tasty. Was about to pull out some steaks to grill when-OOPS-- I found some raw chicken breasts in the fridge that were about to expire--thought immediately about this go-to family fave recipe. So I'm gonna whip it up tonight and just reheat tomorrow for dinner. Extra yummy if you crumble Fritos or tortilla chips either on the bottom of bowl or sprinkled on top. Love adding cheese and sour cream too. Great leftovers!
