Greek Chicken Salad

Fantastic! Hit the spot. Made it twice in one week. Used Athenos Greek salad dressing,used feta cheese with garlic and herbs and omited the carrots. If you like all the ingredients for this you will love it. However, my husband wouldnt even touch it. Its a keeper in my recipe book.

Christmas Breakfast Sausage Casserole

Black Bean and Corn Quesadillas

We loved these at our house. I did a few things different. First I skipped putting the brown sugar and pepper flakes in. I tossed in some grilled chicken and added more salsa in the mix. It was a huge hit at our house.

Marbled Almond Roca

This tastes like the real deal.Very easy and very good. Instead of using 1/2 of almonds, I toasted a cup and then put 1/2 or more of that on the bottom of pan and then sprinkled the rest over the spread chocolate.

This was the bomb!!So awesome! It is added to my christmas goodie list for years to come. I se starlight mints beause they are easy to unwrap and I use a food processer to chop them up.

Simple Time Pork Chops

We really like these chops! Great step away from the ordinary. My only change would be to use half the seasoning salt and maybe another herb combo. Was kinda salty for my personal taste.

Chantal's New York Cheesecake

This is cheesecake always gets rave reviews. I think it is better the day after. Sometimes I change out the crusts. A favorite is using a whole box of Lorna Doone Shortbread cookies with a sprinkling of Cinnamon mixed in or using oreo cookies. Make into crumbs using my food processor and then combine 3 TBSP of Butter in. To avoid a cracking cheesecake it has to be moist enough to prevent this in the oven. So, even with turning off the oven and letting it sit for hours mine cracked every time. Nothing I did wrong. So if this is happening to you like it did me, countless times. Use a water bath. It works and is easier than you think. Buy wider foil to wrap pan in. Pressing the foil slightly over the edge of the pan to seal it.I do a double layer of it. Boil water on stove. Put cheesecake with foil in the pan. I use a roaster pan. Pour the boiling water around the cheesecake about and an inch or more. Bake cheesecake for an hour. Shut the oven off and leave cheesecake in for about 6 hours. Take out an put in fridge. Turns out beautiful every time.

Easy Slow Cooker French Dip

This is super easy and so good. Guinness is my choice of beer to use. Any stout is preferred. I actually cook all of my roasts with it, doesn't matter what kind of meat. Anyway, back to the recipe. Sometimes I throw in a packet of dry Itailian dressing. I sear my roast before I put it in the crock pot too. I cook mine low and slow for 8 or more hours. Instead of slicing it, I shred it. Yummers!

The Best Banana Bread

Simplicity at it's best. That is my description of this bread. My only addition was a tsp of vanilla and I used half white sugar and half Splenda. Moist and flavorful.

Enchilada Stuffed Shells

This was really good. The hubby raved about it. However, not thinking I cooked the whole box of shells but that was ok. Had enough meat to fill all but about five of them. Also, a half a cup of refried beans doesnt cut it. I ended up using about a can and a half. Ended up cooking two pans of it this way. Used green chile enchilada sauce. Yummy!!

Uncooked Banana Pudding

Pumpkin Cheesecake II

I make a lot of cheese cakes and this one was I think my best one yet. It was a hit! It turned out fine with eliminating the whipping cream, as I was out. Instead of mace, I used 1/4 tsp Cloves along with the other spices. Based on others suggestions I made a gingersnap crust, which people loved. Lastly, I cooked it in a water bath. Turned out perfect. I think I might make another one of these soon.

Irish Cream Bundt Cake

This is an awesome cake. I have been making it for a few years now and not just for St Patricks Day. Different Irish Cream liquors can make a difference. Bailey's and St Brendans are stronger while Carolan's gave it a light, subtle flavor. Just something to think about.
