Black Bean and Corn Quesadillas

We loved these at our house. I did a few things different. First I skipped putting the brown sugar and pepper flakes in. I tossed in some grilled chicken and added more salsa in the mix. It was a huge hit at our house.

Italian Roast Beef I

The key with making Itailian Roasf beef is to put it on low in a crock pot and let it cook at least 8 hours. Another thing, I have never heard of Itailian Beef sliced. Usually it is shredded and served with peppers and some melted Mozzerella cheese. It's generally so good it can melt in your mouth.

Marbled Almond Roca

This tastes like the real deal.Very easy and very good. Instead of using 1/2 of almonds, I toasted a cup and then put 1/2 or more of that on the bottom of pan and then sprinkled the rest over the spread chocolate.

Candy Cane Fudge

This was the bomb!!So awesome! It is added to my christmas goodie list for years to come. I se starlight mints beause they are easy to unwrap and I use a food processer to chop them up.

Simple Time Pork Chops

We really like these chops! Great step away from the ordinary. My only change would be to use half the seasoning salt and maybe another herb combo. Was kinda salty for my personal taste.

One Bowl Buttercream Frosting

This recipe was ok. Made it with out the cocoa and it tasted good. However, it is very, very soft even with more powdered sugar. Applied to cupcakes with decorating tip, seemed good but then just seemed to melt. Would be better on a cake maybe, not cupcakes. Search for the perfect recipe continues.

Enchilada Stuffed Shells

This was really good. The hubby raved about it. However, not thinking I cooked the whole box of shells but that was ok. Had enough meat to fill all but about five of them. Also, a half a cup of refried beans doesnt cut it. I ended up using about a can and a half. Ended up cooking two pans of it this way. Used green chile enchilada sauce. Yummy!!

The Best Banana Bread

Simplicity at it's best. That is my description of this bread. My only addition was a tsp of vanilla and I used half white sugar and half Splenda. Moist and flavorful.

Chicken Pot Pie IX

We love this chicken pot pie. After making it a lot I revamped it for being quick and easy. Here are my changes. I use two cans of chicken, drained. Two and 1/2 cups of frozen mixed veggies,if not using celery. If using celery, use two cups frozen frozen veggies and 1/2 C celery. For onion I just use onion flakes added to the broth mixture and then omit the butter. Lastly, I just make my own broth using chicken boullion.
