Cinnamon and Lime Chicken Fajitas

Delicious! I followed the recipe exactly, except I didn't add the jalapeno peppers or any heat at all due to my little kids. It was still delicious. I cooked it at 400 degrees. I went 40 minutes for the potatoes and 30 minutes for the chicken. I think we'll be having it again tonight. Even my most picky eaters loved it.

Easy Chicken Enchiladas

Everyone has absolutely LOVED this when I make it. If we have people over, this is what I make. I modify it by halving the cream cheese. I coat the baking dish with enchilada sauce, add the enchiladas, smother them with enchilada sauce, and then adding the cheese. I bake it on 400 degrees for 20 minutes to make it cook faster. It still tastes the same (I've done the 350 degrees for 30 minutes as well). I highly recommend using the Ten Minute Enchilada Sauce also found on this site. It's what I always use with it and everyone loves it.

Sausage Corn Chili

Chicken Pot Pie IX

This is DELICIOUS! My whole family loved it. My daughter hates everything (almost literally) and it's a real fight to get her to eat. She couldn't eat this fast enough. It shocked both my husband and I to watch her eat this food so fast. I've never liked chicken pot pie (only made this for my husband), but I absolutely LOVE this recipe. I was shocked to have liked it so much. The only difference was that we used frozen sweet corn instead of peas. Instead of cubing the chicken, I shredded it. I think that's about the only things I changed. I HIGHLY recommend this to anyone...if you don't like pot pie, try it just to see, you might be surprised that you like this. It's delicious!

Chicken with Couscous

We thought it was delicious...even if I did accidentally use Cayenne red pepper in place of the curry powder (boy was it hot!). I guess that's what you get when I cook! Even with that, though, it was really good. My husband liked it too. We just had to take little bites and eat it with bread to calm the burning in our mouths. I used chopped green chilies in place of the jalapeno peppers. I also didn't use any zucchini or coriander seed (didn't have any), and I used two carrots instead of one. I was going to add a dash of the cayenne pepper...but accidentally used 1.5 tsps in place of the curry powder, which I wouldn't recommend doing. It was yummy even with the mistake!!

My Chili

We don't really like ground beef, so we switched to 2 lbs of shredded chicken and made the rest the same. It is delicious!! We love this recipes. We first tried it with ground beef, and we really liked it that way too (except for the fact that we don't like ground beef!). It's one of my husband's favorite recipes.

Bierock Casserole

I thought it was delicious and very filling. I switched the ground beef for shredded chicken, but everything else I did the same. It was very yummy! My husband doesn't even really like sauerkraut, but he liked this.
