Delicious! I followed the recipe exactly, except I didn't add the jalapeno peppers or any heat at all due to my little kids. It was still delicious. I cooked it at 400 degrees. I went 40 minutes for the potatoes and 30 minutes for the chicken. I think we'll be having it again tonight. Even my most picky eaters loved it.

Everyone has absolutely LOVED this when I make it. If we have people over, this is what I make. I modify it by halving the cream cheese. I coat the baking dish with enchilada sauce, add the enchiladas, smother them with enchilada sauce, and then adding the cheese. I bake it on 400 degrees for 20 minutes to make it cook faster. It still tastes the same (I've done the 350 degrees for 30 minutes as well). I highly recommend using the Ten Minute Enchilada Sauce also found on this site. It's what I always use with it and everyone loves it.

This is DELICIOUS! My whole family loved it. My daughter hates everything (almost literally) and it's a real fight to get her to eat. She couldn't eat this fast enough. It shocked both my husband and I to watch her eat this food so fast. I've never liked chicken pot pie (only made this for my husband), but I absolutely LOVE this recipe. I was shocked to have liked it so much. The only difference was that we used frozen sweet corn instead of peas. Instead of cubing the chicken, I shredded it. I think that's about the only things I changed. I HIGHLY recommend this to anyone...if you don't like pot pie, try it just to see, you might be surprised that you like this. It's delicious!
