Jumbo Raisin Cookies

Something wasn't right about these cookies. I think boiling them in water made the raisins taste funny. Not too big of a hit here.

Owen's Mozzarella and Tomato Salad

This hit the spot. You can make one tomato or several. I sliced moz. but I wonder if you could use shredded? Easy to make.

when this came out of the oven it looked kinda weird, but i stuck it in the fridge overnight and it turned out wonderful. Creamy and rich. I used fat free cream cheese, semi-sweet chocolate chips and 6 oz of chocolate and orange wafers (cuz we ate the other three :O). I didn't have a pie pan so i used a small casserole dish. It is addicting and filling...i am glad i tried this one.

Pasta with Spinach Pesto Sauce

Molasses Cookies

Reminds me of Christmas. I used mild flavor molasses and less spice than reccommended. The 1st time I made these they were perfect. The 2nd time, they turned out too flat. I tried adding more flour but it didn't help much.

Peanut Butter No-Bakes

If you love peanut butter, you will love these. They were a nice twist on rice crispy bars. Simple to make. Fun to make with kids. They didn't make good cookies for us, but they were good bars. Maybe will make again if I have excess peanut butter sitting around the house.

Garden Veggie Pizza Squares

These were interesting. I used flaky biscuits and pulled apart the layers. I would only make these again if I have company. I used yellow onion instead of green. They are tasty. OMG, forget about the rolls and just mix together the cream cheese, ranch and veggies and you have an awesome vegetable dip! By the way, I didn't have a packet of ranch so I used about 1/4 cup of ranch dressing. It worked good.

Tuna Noodle Casserole I

I don't know why people had doubts about this, because we loved it. My hubby didn't even want to try this just because it has tuna in it (he won't touch Tuna Helpers), but once he did, he couldn't stop eating it! Maybe it just turned out perfect for us this time?? It wasn't too hard or too runny. We will definately be trying this again. I added 1/2 cup extra cheese, medium egg noodles, one extra can of tuna. You could eat this without baking. Baking makes it crispy, more delicious. I am never going to buy Tuna Helper again! BTW: I love Tuna!

Poppy Seed Muffins

These turned out cake-like. They were good, but next time I would add more poppy seeds and maybe try adding lemon extract?? The glaze was sticky, and nobody liked it. This recipe made 24 muffins! I didn't expect so many. I think I will try something different next time.

Suki's Spinach and Feta Pasta

This is good stuff. We are going to make this at least once a week now. I used grape tomatoes (all I had on hand), and 8 oz. of mushrooms. Next time I will double the spinach at least. It looks like you are adding a lot of spinach, but it all gets cooked down. Use only fresh spinach. My boyfriend gave it 4/5 stars, but he never gives anything 5 stars. You can use 7 oz. of almost any kind of pasta.

Rhubarb Bread I

This was the most delicious bread! I don't like rhubarb, but everyone else does, so I thought I would try this. Oh, so good! I only tried it when it was still warm, so I don't know if it is as good cold. Oh heavens, I would definately make this again. I made it without the nuts and with canola oil. I wish I could have some right now. I haven't been able to find a good rhubarb crisp recipe, but I don't care any more because I can make this bread now. Make sure you have lots of brown sugar on hand! -- Ok the second time I made this, it wasn't as big of a hit. I used older rhubarb. The bread was still soft, but maybe I shouldn't have cut the rhubarb in such small chunks. I liked the topping, but nobody else did. Hmm..

Sweet Sauce for Vegetables

We tried this sauce on kabobs and grilled them. I didn't care for them, but everyone else thought they were good. I guess if we had more time, we would have tried a marinade and soaked the veggies, but since we had to make them quick, this seemed to work well. The sauce didn't have much zip.

Awesome Eggplant Rollatine

This was a pain to make. Next time I would definately try baking the eggplant instead of frying. The dipping mixture was too thick and we ran out (I used only egg whites plus I added milk). One eggplant was enough for three of us, plus we had leftovers. Not my favorite, but the leftovers are gone. The eggplant tasted like chicken or fish??

Jamie's Minestrone

Good minestrone. You could add just about any vegetable to this. I used fresh green beans (instead of canned), tomato paste (instead of tomato sauce), vegetable broth (instead of chicken broth), and 1/2 cup spagetti sauce. Turned out delcious. Make sure you add baby spinach, it cooks down and tastes yummy. Oh, you can't hardly taste the garlic, so if you love garlic, at least double the amount.

Banana Bran Muffins

As bran muffins go this is probably the best I've had. I added applesauce instead of butter, added a little extra wheat bran, and used only egg whites. Other than that, I followed the recipe exactly. They came out great.

Banana Bread IV

Our bread turned out good. We followed another persons reccommendation and added nonsweetened applesauce instead of shortening. We had to bake the bread longer than suggested. I wish we would have added some brown sugar, at least to the top to make it sweeter. Of course, it tastes better made with butter, but considering the calories we saved it was worth it.

Pan-Fried Asparagus

This was the best asparagus I've tasted. We only had 6 or 7 spears from our garden so we improvised and cut down on the butter (1 tbs) and the oil (1 tbs). We still used lots of garlic. Yum!

Rhubarb Crunch

Very Good. The first time I added 3/4 cup butter...which was way too much. Second time...1/2 cup of butter (it's in the oven now and smells good :). I wish I would have read the reviews before I made it...because I would of added at least 1 more cup of rhubarb.

Artichoke Dip I

This stuff is sooo good. We don't add paprkia. But beware: too much and you'll be trying to work it off at the gym for a week. Bake some sliced french bread. Make sure you invite lots of friends over, and serve this as and appetizer. They will want to come back for more each week. Oh... use good quality mayonnaise otherwise you will have a thick layer of oil (ewwee).
