Grilled Fish Tacos with Chipotle-Lime Dressing

I'm giving "grilled fish tacos with chipotle lime dressing" 5 stars but I do it a little bit differently with the same ingredients. First, I make the Chipotle-Lime Mayo, but I then mix it with a 1 cup of pre-shredded coleslaw mix. We blacken then grill the fish (sometimes in a cast iron skillet), add shredded cheese to the tortilla before placing hot fish on it (so cheese melts) then add the coleslaw and some homemade fresh salsa. YUM! So healthy and delicious. Just like they make at McCormick and Schmik's, only at home! A+++++

Spicy Chicken and Cilantro Wontons

Awesome. Made these as "potstickers". Used boneless chicken thighs and eliminated the lemongrass. Put every other ingredient into a food processor until blended,then wrapped the filling in the wonton wrappers and kept in the triangle shape. We sauteed them in a tbsp of veg oil for 2 minutes, added 2 tbsp of water, covered and let steam for 4 minutes. Dipped in sweet chili sauce and YUMMMMMY! Made these for guests 2 nights in a row and RAVE reviews! Looks difficult but VERY easy and delicious!***update*** used ground pork last night and that was just as yummy!!!

Slow Cooker Split Pea Sausage Soup

EXACTLY what I was looking for. Put everything into the slow cooker for 4 hours (9 cups of water) and used 2 smoked pork chops instead of sausage (cubed the meat and put the bones in for flavor). After 4 hours on high I took the bones out and it was still too thin, so I added another 1/2 lbs. of peas and let sit for 2 more hours. Turned out PERFECT. Will be enjoying for days! Thanks so much!!

Zucchini Bread IV

My fiance says it's Better Than His Mom Makes! I cut the recipe in 1/2 and did add the topping (cut in 1/2 as well) and came out DELICIOUS! Only took about 45 minutes to bake in a toaster oven. So yummy, this is a new favorite.

Thai Chicken Balls

Made this recipe for a Girls Night Out and had at least 5 people ask for the recipe. Used ground turkey, added minced garlic and ginger, used panko bread crumbs and also an egg white so it would stay together...everything else just as the recipe states! DELICIOUS!! (I also browned them in a saute pan and then baked them on a cookie sheet for 15 min at 350 degrees so they would all be ready at once)

Easy Quiche

Threw this together for a last minute brunch. SO GOOD! Had all of the ingredients on hand, substituted bacon for the ham, and did add sauteed onions and mushrooms since they were also in the fridge. Didn't have beaters, so just mixed with a wisk, and still turned out GREAT. Made it in a 13x9" dish and it was delicious! Will definitely make again and again! A+++

Italian Sausage, Peppers, and Onions

Very good, simple recipe and exactly what I was looking for! I used hot turkey sausage (which tastes JUST like reg. sausage), olive oil instead of butter, and red & yellow peppers. After the white wine evaporated, I added 3 cups of homemade marinara sauce and served it over rigatoni. Everyone had seconds, and I finished it today for lunch! Delicious!!

Overnight Egg Casserole

Long time recipe in our family. Used cream of chix and cheese for the soup, and also used Turkey sausage-don't know the difference! SO good, ALSO A MUST**put some soft goat cheese on top right before baking. Everyone said it "Made" the dish. Almost too easy to be this good! Rave reviews from all that ate it!

Scalloped Potatoes and Onions

Made this tonight for Easter. Great low fat alternative to classic scalloped pot.'s Made ahead of time and a few of the top potatoes browned, but other than that...I did add some shredded cheddar cheese at the end and they turned out great.. Dad quoted, "these don't look lo-fat, but they are fantastic"

Beef Stroganoff III

FANTASTIC w/some modifications! Used Chicken Italian Sausage (which is so good we can't tell the difference-even my husband who is a sausage lover!) Also used 1/2 yellow onion instead of the green, and added garlic. Also switched out the beef broth for chicken broth. Other than the ingredient substitutions, followed the directions and served it over egg noodles. Couldn't get enough!!

Delicious! Made it last night for guests and they wouldn't leave without the recipe. I did saute cremini mushrooms along with the shallots, but other than that, wouldn't change a thing!

FANTASTIC. A recipe I keep coming back to. Easy to scale down for a weeknight meal, but I make it frequently when we have guests over for the first time. Wouldn't change a single thing. DELICIOUS!

Tortellini Soup I

I'm ashamed to say this is only my 2nd review on this site (because I'm on here every single day) but I had to let you know that this is an amazing meal. I made it tonight for dinner for 4 adults and there only 1 1/2 servings left that will definitely be gone by tomorrow! Trying to eat healthy since it's the new year and even my husband who is a very "meat and potatoes" guy, absolutely LOVED it. All of the guys went back for a second serving. Served it with a sliced baguette rubbed with a little olive oil, toasted, then rubbed with a sliced piece of fresh garlic, to soak up the soup. DELICIOUS!!!!

Cajun Seafood Pasta

AAAAA+++++ recipe!! I have made this several times, mostly when entertaining and no one can ever get enough!! I don't usually use white pepper bc I don't keep it on hand. Have used both bay and sea scallops and/or shrimp and it's FANTASTIC every time. When I asked my boyfriend yesterday what his favorite meal I made at home was, without a doubt this was it!!!!! Favorite recipe on allrecipes.com by far!
