Spinach Salad with Warm Bacon-Mustard Dressing

I made slight alterations based on what I had. I used balsamic vinegar instead of white wine vinegar and also cooked it in bacon fat and it was delicious. That was the only change I made to the dressing. I also added avocado and parmasean. I left out mushrooms, almonds and swiss cheese because I didn't have it. I think this recipe was awesome with the changes I made but would also be just as good as is.

Pumpkin Curry with Lentils and Apples

I really like this recipes. I made adjustments just so I could work with what I had on hand such as using a delicata squash instead of pumpkin, but can't wait to try it with the pumpkin. I think I also put extra apples into it. Loved the apples in this recipe!

Springtime Asparagus and Parmesan Sandwich

This was really good! I heated the asparagus for 2 minutes and added grilled red bell peppers. I also toasted the bread first (we just used wheat bread). Made one for lunch tomorrow, I hope it holds up well!

Simple and delicious! Just what I like in a recipe! We left off the french onion crunchy things to keep it healthier. Be sure to add FRESH parsely, it made a huge difference.

Spaghetti Squash I

I made this tonight (first time making spaghetti squash) and it turned out fantastic. I didn't really know what to expect but I will definitely make again. I boiled the squash whole for about 30-35 minutes instead of baking. It's too tough trying to cut it in half uncooked. I also used red, yellow and green pepper, onion, spinich, mushrooms, and feta, Added salt, pepper and a dried basil. Didn't have any tomatoes, but I didn't feel like I was missing anything, and purposefully left out olives. It's a very versatile recipe.

Slow-Cooker Chicken Tortilla Soup

Excellent! I took the advice of others and added the uncooked chicken at the beginning and then shredded it. It turned out perfect! I didn't bother with the chips, just added sour cream. Also, I didn't think this was spicy and I made it exactly as recipe stated. I used a mild enchilada sauce instead of hot. Maybe that's why. I know some reviewers said it was too spicy.

Black Bean Chili

This was a good recipe. Prepare to do a lot of chopping if you go with all fresh vegetables like I did. I used half of the jalopeno pepper, but will probably use more next time. I will probably use less chicken broth next time as well. I tend to like it a bit thicker.

I love this recipe. I followed the recipes excactly and will be making over and over again. It's so simple to throw together and tastes wonderful. This could be eaten alone, in a tortilla, or even made into a soup. I love it!

Quinoa and Black Beans

Excellent! I took the advice of others and only used 1 can of black beans. I was afraid that it was going to be too spicy but it was perfect. I served it with bread and butter to help cool down your mouth a little, although it really isn't too spicy just flavorful. I've cooked it twice so far and it was delicious both times. Good as leftovers too.
