This was a fantastic recipe. I modified it and it was wonderful. I added cubed pieces of butternut squash, yellow onion, diced broccoli, and shredded carrots, and sauteed it all together with a little fresh garlic. I then followed the recipe and added the spinach to the ricotta mixture. I used fresh spinach and just sauteed it down a little also before mixing it in. I while say the the recipe calls for you to add half a cup of milk to the alfredo sauce with ended up making it a little too liquidy and it fell apart and didn't look as pretty. I guess it depends on how thick or thin the alfredo sauce is that you are using, next time I don't think I will add milk. I also followed some suggestions of adding panko bread crumbs on top with some fresh oregano as well and it came out beautifully!
