Country Apple Dumplings

My boyfriend is obsessed with this dish and it's so cheap and easy to make. I'm usually cooking for two so I cut the recipe down to 1 Granny Smith & 1 package of dough. The original recipe is very saucy so if you like it a little drier like I do, skip the Mountain Dew. I put a few pads of butter along with a sprinkling of brown and white sugar and cinnamon and pop it in the oven. I cut the sweetness by serving it with a small scoop of vanilla ice cream.

Valentine Night Strawberries

Tried this for a Valentine's night dessert and man was it easy and delicious. I actually just grabbed a honey walnut cream cheese from the store and it was great. Made some designs on the plate with some balsamic reduction and it was simple, elegant, and easy after a rich and labor intensive dinner!

Enchiladas Verdes

Great sauce recipe. I used a store bought roasted chicken for more flavor. Feel like the recipe is missing something though, it's a little dry. Maybe so cheese or something rolled up with the chicken inside?

Chicken Asparagus Roll-Ups

My boyfriend begs me to make this. Sometimes I substitute green beans for the asparagus & it works just as well. I also pour a little chicken broth in the baking dish to keep it nice and moist. Great go to weekday dinner.

Asparagus Roll-Ups

Way too much bread and does not look appealing to guests. The bread dries out and looks unappetizing. All the other flavors are good but no one could tell what was inside so no one at my party ate them.

Chicken Tortilla Soup V

The can of salsa is the key and makes this sooo easy. I also use a store bought whole roasted chicken for this so it's more flavorful. Add avocado slices, a dollop of sour cream, cheese and tortillas strips and you've got an impressive, easy meal for guests. I usually make cornbread to go along with it.

Colonial Hot Buttered Rum

This awesome! Used it twice over the holidays and everybody raved about it. It smells up the house wonderfully and you can go look at Christmas lights or whatever, comeback & it's ready to warm up all your guests. Very smooth, great nightcap.

Kale Chips

If you're like me you'll be tempted to add more oil than the recipe calls for. Don't do it. Too heavy a hand will make these soggy and not really a healthy snack anymore. After adjusting to less oil they came out great. I also prefer Apple cider vinegar so I used that instead, delicious. One recommendation, let them dry out over night in a bowl or a tray. If you bag them up too soon they get soft and not crunchy. Crunchy is way better.

San Francisco Pork Chops

The sauce on this is fabulous. The only change I would make is to not cook them so long. Mine were over done for my taste. Next time I would get a good brown on the meat and the take it out and let it rest while the sauce cooks down with the pork drippings, then when the sauce is almost ready finish the pork in the sauce keeping a close eye on it.

On Wisconsin Beer Brats

Excellent marinade! I followed a suggestion and grilled the brats first then simmered them for an hour after. I just put two whole garlic cloves in the mix instead of the minced for a more subtle flavor. I used my vegetable slicer and made the onions into fine strings and also added sauerkraut to the mixture. I made sandwiches on French rolls & sliced pickles and added them along with Dijon mustard. It's rare that a new meal comes out perfect the first time but this was great!

Marinated Rib-Eyes

This was awesome, the brown sugar adds a nice char. I only added a teaspoon of Trader Joes Garlic Aioli Mustard to each bag and it really deepened the flavor. Will use this as a go to marinade from now on

Easy Spinach Lasagna with White Sauce

This was a fantastic recipe. I modified it and it was wonderful. I added cubed pieces of butternut squash, yellow onion, diced broccoli, and shredded carrots, and sauteed it all together with a little fresh garlic. I then followed the recipe and added the spinach to the ricotta mixture. I used fresh spinach and just sauteed it down a little also before mixing it in. I while say the the recipe calls for you to add half a cup of milk to the alfredo sauce with ended up making it a little too liquidy and it fell apart and didn't look as pretty. I guess it depends on how thick or thin the alfredo sauce is that you are using, next time I don't think I will add milk. I also followed some suggestions of adding panko bread crumbs on top with some fresh oregano as well and it came out beautifully!
