World's Best Potato Soup

We tried this soup for one of our weekly dinner parties. It's a good basic recipe but our improvisation made it better. To accommodate the vegetarians at the party, we used a whole box of No-Chicken Broth which actually tastes the same and cooks just as well. For the bacon bits, we served them on the side to use at their own discretion. We did the same for the cheese because somehow 2 cups was not enough. When boiling the potatoes, we added plenty of garlic salt, chives, parsley and rosemary which gave the recipe a wonderful flavor. The cooking time was actually much longer than suggested because the soup resisted thickening. To give it that thick, creamy consistency we added half a tablespoon of cornstarch and mashed with a potato masher (did the job perfectly and was less to clean).

Spinach Salad with Curry Vinaigrette

This salad was a hit at my boyfriend's birthday party. Since he is vegetarian, I substituted the bacon with tempeh "fakin' bacon" which tastes closer to the real thing than any vegi-meat around and has a nice crunchy consistancy. I also added cherry tomatoes. Yummy... I will be making it again.

Creamy Au Gratin Potatoes

This recipe was okay. I hate onions, so I added lots of roasted garlic as well as swiss and gruyere cheese for an added kick. Even with the additions, I found it slightly bland tasting. My boyfriend raved about it, though and wants me to make the dish again. Yet another case of varying tastes...

Four Cheese Macaroni

I'm a mac and cheese fan from the beginning and this dish knocked my socks off. I added all the cheese I had in the house to it and could feel my arteries clogging with every bite. So good... Thanks.

Artichoke Spinach Lasagna

Although this dish was quite good, I recommend that you get the artichoke hearts marinated in oil. They are slightly more expensive, but the ones I got were in herbed vinegar and gave the dish that vinegar taste. Luckily, it was not even noticable when I heated it up as left-overs.

Chile Rellenos

This dish was fantastic. My boyfriend wanted seconds and even thirds. I used the canned whole chiles and added monterey jack in with the cheddar. It turned out very well. The only downside was that the batter made a huge mess afterward. Oh well, that's what 409 is for. I will be making this one again. Thanks.

Sukhothai Pad Thai

Wow! I must admit I was skeptical when I tasted the sauce before adding it to the noodles. I figured my boyfriend would be stuck with eating all of the the dish because it would have too much of that vinegar flavor. It actually turned out very well once it was added though, almost like something from a restaurant. Thanks so much.
