Strawberry Lemon Muffins

I used froZen the first time and fresh picked farm stand berries the second, and it was a huge difference. So much more juice, flavor, etc. One lemon and zest was more than enough to make a tangy balance to the sweet berry. But then I zest every millimeter of my lemon. Topped them with turbinado sugar crstals and they are very pretty and delicious!

Russian Mushroom and Potato Soup

Delicious, a wonderful rainy day feel good soup. Hubby likes it thicker, more stew like - a couple tbs of minute tapioca made it perfect for him.

Honey Baked Chicken I

I'll admit I altered this a bit because all I had were boneless-skinless breasts. I cut them in strips and pounded them out a little, then basically followed the recipe except I cooked them in a large skillet on the stove top. A little mustard powder gave it almost a barbeque taste that the hubby truly loved. I'll definitely try it again with bone in chicken pieces - loved the mix of ingredients! Thanks so much for another keeper.

Delicious Ham and Potato Soup

This was a great recipe. I did somewhat alter it; I added about a cup of potato flakes rather than dealing with the flour roux because I was running short on time. I added it about a third cup at a time and in three stirs it was thick and delicious looking so I called it done. I'll definitely make it again the right way, but since the hubby went back for seconds - I would say this was a hit.

Fabulous Beef Tenderloin

Excellent simple recipe. Other than a little cracked pepper, I did nothing differently and it was perfect. A little mushroom gravy, some asparagus and brown rice and my husband was asking what I did wrong that I needed to butter him up so much. I'm not about to tell him I did this because it was the quickest and easiest!

Suburban Cowboy Delight

My husband still loves this recipe, though I definitely kick it up a notch with a touch of some red and white pepper, a little mustard powder and touch of molasses. I like this meal since I watch closely what I eat now (diabetes) and let the hubby eat the biscuits. The beans fill me up without triggering my sugar. That touch of molasses doesn't even register for me. I do substitute a nice smoked turkey bacon and use lean ground beef - organic beans, to keep it healthier. Most recipes can still be good, even when done healthier, and I think this is a classic.

Penne with Spicy Vodka Tomato Cream Sauce

With no vodka, only a half-can of tomato paste and a small can of stewed tomatoes and just one clove of garlic, I decided I could make this work - and it turned out wonderful! I squeezed 3 links out into chunks to make it a bit meatier for my guy, and cut the red pepper in half. (We're wimpy with hot stuff) I just added water to the rest of the can of paste to make the sauce and a dash of italian seasoning so the paste wouldn't bland everything. I can't wait to try the recipe as written (except for the pepper of course) because this had an awesome flavor. The heavy cream really does add a little somethin-somethin. I got 2 thumbs up, so you get 5 stars! Thanks.

Yummy Yellow Taters

Nice and rich, using half and half. I forewent the food coloring - the yellow butter potaoes I used cast their own nice hue. All in all boiling the potaoes in their own spices lent them nice flavor without obvious add-ins. Good stuff!

Perfect Sesame Chicken

I made this tonight for my husbands birthday. I got rave reviews from everyone, including the MIL! I cut the sugar down to 1/3 cup and to be honest, it could have been 1/4 or under even. It was just awesome, the flavor outstanding. I didn't dump the entire slurry of cornstarch/water, but kept adding until I was satisfied with the thickness, definitely did not use it all. I think that is just a preference type of thing. I will be making this many more times!

Black Bean Quesadillas

This simple and easy meal really works for us. My husband likes just the plain bean and cheese - while I adore to pile spinach leaves and salsa and sour cream on mine (and eat less carbs than him! :). I only had a bag of Italian four cheese and some sharp cheddar, but it worked fine. Onions and garlic really do add depth to the wonderful black bean flavor. Yum! Thank you for sharing.

Crustless Spinach Quiche

I only had fresh spinach, so I used a bag of that and lightly sauteed it with the onions and some sweet red pepper - this turned out beautiful! My first quiche and I got rave reviews, so I am very happy. Thanks for sharing!

Bow Tie Pasta with Sausage and Sweet Peppers

Excellent recipe. Like others I added a couple veggies - sweet roma tomatoes and peas. I got a wild hair and decided to melt some cream cheese in the brothy bowties and man oh man, was it good. A little Parm on top, and another staple meal was born. Thanks!

Chicken Pot Pie VIII

I put this in a deep square cassarole dish and it turned out awesome. I actually did the crust myself following the recipe - used Butter-flavor Crisco. Ended up using a lot more water though 8 instead of 6 tbsp to make it come together. I thought I measured well, but perhaps I had more flour, not sure. I put the water from parboiling the potatoes/carrots in the chicken pot and came up with 4 plus cups of broth and used most of it. The consistency was still really great. Also threw in a handful of frozen peas and corn at the end before baking. The hubby worships me now. :) Thanks.

Chicken Andouille Gumbo

The spices in this recipe are great. It was easy to alter it slightly for our tender mouths - we just used smoked sausage instead of andouille which is a little too hot for us. I did add like 5-6 drops of hot sauce for that underlying 'kick of taste'. I cut down time spent by using chicken tenders. Browned them lightly with a mirepoix (carrots/onions/celery)and then added the rest of the ingredients. Also a can of fireroasted tomatoes and garlic in with the italian added another depth of flavor. Super nice recipe - we served it with Sweet Thai Black Rice - and it's mildly nutty flavor and color really added awesome visual and flavor interest.

Grandma's Green Bean Casserole

Very good. I'm going to try it again without the low fat sour cream. I think it needs the richer, creaminess of regular. It doesn't replace the feel-good of the traditional, but it is an excellent recipe for that something "different".

Awesome Steak Marinade

Great combination of flavors that really compliment steak. I used chopped garlic instead of the powder and added a bit of green chili sauce to kick up the flavor profile a bit. Awesome!

Favorite French Dressing

Very Nice! The chili sauce gives it a good zing. I used red wine vinegar and olive oil and added a little white pepper and garlic powder for more punch. I did use only 1/4 cup of fructose and a little pineapple juice versus the full 3/4 cup sugar because I have to watch my sugar intake. Will definitely use this again!
