Mulligatawny Soup II

This is the first time I have ever had Mulligatawny soup so I'm not sure what it typically tastes like. I love Indian food and decided to make this recipe because it sounded intriguing. I followed the directions and added the spices as stated (as ground spices rather than whole). The overall result was delicious but this is probably not a recipe I will make again. I agree that it would taste MUCH better with whole spices that are toasted in oil and ground before adding. I also think I would reduce the amount of broth added to 5 or 6 cups.

Cuban Black Beans II

Great recipe! I didn't have any black beans so I used a mixture of kidney and pinto beans. Instead of cooking it on a stove, I assembled all the ingredients (minus the tomatoes and vinegar) in a crockpot and left it on while I was at work. I mixed in the rest of the ingredients after the beans were cooked. I froze the leftovers and re-heated them later and they were still delicious. I think this will be even better next time when I actually use black beans!

Cape Cod Oatmeal Cookies

I liked the idea of this recipe. I'm a big fan of a hearty oatmeal cookie full of chocolate, nuts, and whatever else. The cookies I made came out a bit dry but were good overall. I think next time I make it I will add more molasses and more chocolate chips. I made a batch for an office party and though they all disappeared, I have a feeling they weren't people's favorite dessert (but I guess you have to be a big nut/dried fruit fan to appreciate them!)

Goat Cheese and Arugula over Penne

I thought this recipe was good. I give it 5 stars for being quick and easy to make and 3 stars for overall taste (4 stars overall). Next time I make it (and I will make it again)I will: (1) Sauté the garlic. I am a huge garlic fan but the fresh garlic taste in this recipe was overpowering and did not mix well with the other ingredients. I think the flavor would be better if it were sautéed for a few minutes. (2) Add a few more vegetables...perhaps mushrooms and sun dried tomatoes. You could even sauté the mushrooms and the garlic together. (3) Add some freshly grated parmesan cheese. The goat cheese was good but I think the added tang of some parmesan would be delicious. I re-heated this recipe the next day and it did not work well. It still tasted good, but it was not the same. This is not necessarily a bad thing though! A recipe like this, full of fresh ingredients, shouldn't be saved for leftovers. Overall, this was a very tasty dish...thanks!

Pumpkin Butter

Delicious. The spice ratios were perfect. I used a whole pumpkin (I steamed it before I used it in the recipe) and doubled the other ingredients. I used some maple syrup and stevia in place of half of the sugar. The recipe made 8 jars which will be great holiday gifts.

Hearty Lentil Soup

Great recipe. I didn't add the wine and I didn't miss it. I substituted an onion for the leek and though I'm sure it would have been even more flavorful with the leek it was fine as it was. The root vegetables gave it a delicious taste. I pureed half of the soup for a semi-chunky consistancy.

Squash Soup with Chili Puree

Pakistani Style Vegetables

The spice ratios in this recipe are no good. The amount of turmeric and garam masala struck me as excessive but I made the recipe as stated anyway. The result was flavorful, to be sure, but the flavors were not balanced correctly. I ate it, nonetheless, and doused it with yogurt to mask the strong turmeric taste. I guess you could make this with 1/2 teaspoon of turmeric & garam masala and it MIGHT be OK, but there are so many other great Indian/Pakistani dishes out there that I wouldn't bother.

Braised Chicken in Coconut Milk

This recipe was quick and easy to make. The red pepper rings contrasted with the yellow sauce make it visually appealing as well. A must try!
