Light Avocado Egg Salad

Very good. Mustard and paprika are my least favorite ingredients so I took advice from other poster to use lemon juice instead. Perfect! Lots of salt & pepper a must. For a little bit more kick try a few shakes of Lawry's seasoning salt. Thanks for giving us a mayo-free egg salad recipe

Zucchini Risotto

Very good recipe. I added chopped pancetta since I had it on hand and it added a bit of oomph. I used 2 small zucchinis and added them as the risotto was cooking. Used dried basil as I didn't have any fresh. Will definitely make again!

Pork Chops with Blackberry Port Sauce

Delicious! Didn't have port wine so used Marsala - oh yum! Quick and easy. I did double the shallots (we like them) and the sauce thickened up just fine, more like a glaze. Will definitely make again!

Easy Cranberry Chicken

Super easy. Used chicken tenders as that's what I had on hand. Followed directions exactly and whole family loved. Only needed 45-50 mins. Served over mashed potatoes.

Fish Tacos

Yummy! First time I've ever beer-battered fish and it was delicious! Used halibut and served them in fish tacos, but could easily serve on their own. Next time I'm going to try the white sauce too (not enough time today).

Tuscan Chard and Cannellini Bean Soup

Easy, tasty, one-dish meal! I used cheese tortellini for the pasta, and prosciutto instead of bacon (since that was what I had on hand). Perfecto! Everyone had seconds.

Quick and Easy Vegetable Soup

This recipe is REALLY SPICY! I even cut the spices in half and still had to add sour cream in my bowl because of the heat. It's good, not great. Not a fan of celery due to the bitterness so omitted it, but V8 has loads of it in it. I used all fresh veggies which I could barely taste due to the heat.

Stuffed Zucchini

Very good! Loved the filling and the suggestion to serve with rice was good. I too pre-cooked the sausage mostly because I was short on time. I cooked at 400 for 30 mins and everything was done. Mind you I was cooking one of those home-grown zucchini's that are as big as your arm! If I make again with regular sized zucchini I will reduce the cooking time. I also doubled the cheese as a matter of taste - we really like cheese.

Shrimp Quesadillas

This was really good! I cut spices in half as kid not big on spicy foods and it was perfectly flavorful. Per prior suggestion I baked in 400 degree oven for 5 mins so everything was done at the same time. I will mention that it took a solid 20+ mins to soften the onion and pepper.

Rosemary Ranch Chicken Kabobs

Made as written, except husband too tired to heat up the grill so I improvized as cooked chicken in the wok. Really nice flavor! A bit salty so will cut back on the salt next time - and there WILL be a next time!
